A well-known and respected teacher, Mr. Rehman Ullah, from Kirmen Chipurson, has retired after an incredible 35 years of service to the Gojal community through the Aga Khan Education Service (AKESP).

Throughout his career, Mr. Rehman taught in schools across Gojal, including Khudabad, Passu, and several others in Chipurson. His dedication was unmatched—braving harsh winters with temperatures as low as -22°C, often traveling on his bike despite the challenges. He endured multiple accidents, even breaking ribs along the way, yet his unwavering commitment to education never faltered.

Mr. Rehman’s tireless service has left an indelible mark on countless lives, and his contributions will never be forgotten.

یورپ اور ایشیا کی سرحد پر واقع قازقستان کا کھانا مختلف تہذیبوں کے اثرات کا آئینہ دار ہے۔ ان میں سے ایک اثر خانہ بدوش چرواہوں کے گروہوں سے وابستہ ہے جو پانی اور اپنے جانوروں کے چرنے کے لیے موزوں علاقوں کی تلاش میں مختلف علاقوں کا سفر کرتے ہیں۔ یہ لوگ اپنے جانوروں سے خوراک حاصل کرتے ہیں، جو انہیں مختلف موسموں میں اور لمبے سفر کے دوران کافی ہونی چاہیے۔

"کرت" قازق ثقافت کی ایک روایتی پیداوار ہے، جو خمیر شدہ دودھ کو خشک کرکے تیار کی جاتی ہے، اسی دودھ سے دہی بھی بنایا جاتا ہے۔ اس میں استعمال ہونے والا دودھ عام طور پر بھیڑوں یا گھوڑیوں سے حاصل کیا جاتا ہے، اور کرت بنانے کا عمل خاندان کے تمام افراد کی شرکت سے مکمل ہوتا ہے، جہاں ہر فرد کا ایک مخصوص کردار ہوتا ہے۔ دودھ دوہنے کے فوراً بعد اسے ایک برتن میں ڈال کر کھٹا ہونے کے لیے چھوڑ دیا جاتا ہے۔ جب یہ گاڑھا ہو جاتا ہے، تو گھر کی سب سے بڑی خاتون (عموماً بچوں کی مدد سے) اسے گوندھ کر خوبانی کے سائز کے گولے بناتی ہیں۔

یہ گولے پھر باہر کپڑے یا خیموں کی چھتوں پر خشک ہونے کے لیے رکھے جاتے ہیں جہاں خانہ بدوش قیام کرتے ہیں۔ خشک ہونے کے بعد کرت کو کپڑوں میں لپیٹ کر محفوظ کر لیا جاتا ہے تاکہ اسے باآسانی سفر میں لے جایا جا سکے۔

کرت بہت زیادہ نمکین ہوتا ہے اور اسے اکثر کومِس (خمیر شدہ گھوڑی کے دودھ سے بنی مشروب) یا پانی میں گھول کر پیا جاتا ہے۔ یہ کیلشیم کا بہترین ذریعہ سمجھا جاتا ہے، اس لیے مائیں اپنے بچوں کو اس کے چھوٹے چھوٹے ٹکڑے کھلاتی ہیں۔

کرت کو مختلف طریقوں سے کھایا جا سکتا ہے: دودھ کی قلت کی وجہ سے سردیوں میں اسے ناشتے کے طور پر یا سوپ اور گوشت کے سالن میں شامل کیا جاتا ہے۔

1800 کی دہائی سے خانہ بدوش طرزِ زندگی پر پابندیاں بڑھتی گئیں اور سوویت دور میں انہیں زبردستی مستقل سکونت اختیار کرنے پر مجبور کر دیا گیا۔ آج کل چند ہی خانہ بدوش برادریاں موجود ہیں، جن میں زیادہ تر بزرگ افراد ہیں، اور اسی وجہ سے کرت کے ختم ہونے کا خطرہ ہے۔
