Bolani used to be a great favourite among foreigners in Afghanistan, and are especially delicious when served with hot drinks. Best served crisp and hot, straight from the frying pan. However, Afghans occasionally do offer them cold, especially if they are being made alongside a lot of other dishes.

While this recipe contains a potato filling, you can always try mixing things up by adding in spinach, lentils or leeks!

You will need:
450g white plain flour (or half white, half chapati)
225ml water
3tsp salt
900g potatoes
50g spring onions
1 tsp black pepper
Vegetable oil for frying
Method
Put the flour and teaspoon of salt in a mixing bowl. Slowly adding as much water as is required. Mix to form a stiff dough.
Place the dough on a clean work surface and knead for about 5-10 minutes until the dough is elastic, smooth and shiny. Form the dough into a ball, cover with a damp cloth and set aside for at least half an hour.
Peel and wash the potatoes and boil them in salted water until soft. Drain off the water and mash thoroughly. Add the spring onions, salt and black pepper.
Divide the dough into 3 or 4 balls. Roll out each ball as thinly as possible on a lightly floured surface (the thickness should be no more than 1.5mm - if the dough is too thick the Bolani will be tough)
Take a round cutter of 13-15cm , and cut as many rounds as possible. On each round spread 1-2 tablespoons of the mashed potato. Moisten the edges of the dough, fold over and seal shut.
The Bolani should be spread out on a lightly floured surface until ready to fry. Heat enough vegetable oil in a frying-pan and shallow fry one or two Bolani at a time, browning on both sides.
Make sure to keep the fried Bolani warm until all are finished, and serve straight away.

THE ARYANA CIVILIZATION:

Previous Aryana ( current Afghanistan)had agricultural and watering systems and crowded cities from 2000 to 3000 year before Chris (BC).
1000 years (BC) Aryans (the ppl of Aryana )
had crafts,medicine,astronomy,fabric_ weaving and metallurgy .those people who lived in Afghanistan 2500 years (BC) called their selves Aryans which literally means nobel or owner of good manners.
there is not enough information about their first places ,but it is known that they passed to Afghanistan from Sir Darya (Sir river) and from the north side of Amo river and they established first civilization of Aryans term, and they called their homeland Aryana .
Aryans have pastoral life before getting to Balkh (a name of province in Afghanistan). researchers found a picture of the Aryans king which was drawn on the Clay pot in Samarqand at 1939 , archaeologists said: that picture is the previous king Q Merce of Aryana.also in vedic a king of pastoral is called Q merce .the word king indicate that they had monarchy regime at pastoral life too .
increasing the population obligated them to move towards west,south and Southeast.
to the west side first they got to Parse (current Iran) then to turkey and ever to European countries, they established a new civilization in Parse which is called THE PARSE CIVILIZATION.those group of Aryans who moved toward of Southeast, first got to the north of previous India then central India .
but those people who stayed in Aryana they established two other civilizations after each other ,their names are :
1: Vedic civilization
2:Avesta civilization
