Recipe:

PAWPAW SALSA WITH CUCUMBER CHILLI AND MINT
• 1 medium pawpaw (cubed- very small)
• 2 cucumbers (cubed very small)
• 2 tablespoons fresh mint
• 1 bunch of spring onions or half a finely chopped
red onion
• A tiny amount of red capsicum or chilli pepper
(optional)
• Coconut shredded
• Lime juice
• A dash of Olive oil and salt and pepper

Method:
• Chop the chilli & mint finely
• Gently mix it together with olive oil, salt and pepper
• Serve in a bowl- (so easy and looks amazing!)
Bonus: all ingredients can be found locally! 🫶
