What a privilege to cook alongside @guillaumebrahimi last night, raising funds for the incredible @OzHarvest project … we cooked braised lamb shoulder, salsa verde and cous cous … served to a bunch of wonderful people associated with Ozharvest, plus a bunch of meals packaged up to help those struggling to get food on their table. In their 19 years, OzHarvest have never seen such a demand for people reaching out for help, with hundreds of charities on their waiting list for help to feed our country. $1 donated to OzHarvest creates 2 meals for someone who is hungry - a great project to help if you can. 💛 sound up for Jimmy Barnes at the end, lending a hand serving and belting out a tune. We don’t shine the spotlight on our hero ingredients enough …. so drum roll please … introducing our stunning hazelnuts … grown near Orange in the central tablelands. Fourjay farms is a two generation family business producing high quality healthy hazelnuts in deep, fertile, red soils of volcanic origin.
18 years ago when Josophans began, most hazelnuts we could buy were grown in Turkey, kept in cold storage and shipped to us from the other side of the world. Jodie worked with the dept of primary industries, letting local farmers know there is a large market for hazelnuts in the chocolate and patisserie industry, and encouraging them to plant hazelnuts locally. They’ve just made it through a large covid outbreak of 52, with two deaths 😞 … they needed something to celebrate.
