We popped down to the Aviary Hotel for a quick Melbourne Cup Parma.

Overall disappointing. Chips were good, chicken fillet was too thin and the crumb was a bit too whole grain style for me. Salad added a point. 6.5/10 - Kh

Actually pretty good, juicy chicken good chips and salad, maybe too much herbs in the crumb? 8/10 - Ja

Loved the salad, the chips and of course the chicken. Sauce was great and the jalapeños added an extra kick that made every mouthful enjoyable. 9/10 LB

Salad was amazing but that's not what we're here for. The Parma had an overpowering smoked ham and Italian herbed crust that wasn't very crispy. Chips were good 6/10 KM

Sweet mama Jesus. Has the metropolitan chef moved to Portland and decided to put a smokey ham on the Parma? Yes. Yes he has. Was that a cornflake? Yes, yes it was. IP 9.5/10

I'd say it's probably the best Parma I've had in Melbourne. Minor fault, chips weren't great. Chicken was moist, crumbing was excellent, tasty sauce, cheese was good, as was the salad. Rest of the Parma crew...you suck. You missed a good one. JT 9.7/10

Been too long between visits the Portland has definitely perfected their Parma process - juicy chicken, great crumb, tangy sauce with a hint of chilli, smoky ham and good Ol classic cheesy cheese. Only let down is the not so fresh chips, 9/10

Metro Parma excellent as usual. Love the crumb, sauce and juicy breast. Melts in your mouth. Chips are fabulous. 9.4/10. Ec

Juicy as always, the chips were like pillows covered in crispy goodness, sauce was super tasty, the salad was meh. 9/10

We popped into the European after having been there for drinks many times but had never eaten here. Here are the results.

"The sauce was a little bit too tomatoey. The texture of the chicken was bizarre. I couldn't workout if it was a thigh schnitzel or a breast fillet... Overall it was juicy but bizarre. Crumbs lacked flavour but the chips were good. Overall a 7.5/10" Kristen.

Weird Parma. Had me confused. Presentation spot on. Crumbs soggy on inside. Weird after taste. I can taste lemon. Chips good. Salad good. 7/10 Luke

Chicken was pretty good but crumb was inconsistent density with soggy, crunch and chewy bits. Overall flavour was great, thick cut chips always a winner. 7/10

I liked this Parma - mine was crispy and delicious 8/10

Meh. Wet. Thighs. Chips and salad were the heroes of the dish. 5/10

Finally made it to the Portland Hotel. Here is what happened.

"The Parma came out on a chopping board which was vey hipster. Points for the chips and salad being separate as well so no soggy chips. The Napoli sauce was excellent and the chicken breast was delicious and moist. One thing I couldn't really taste was the Parmesan in the crumbs and the salad was rubbish. Too bad as the ham and overall Parma was excellent. 8.5/10" Kristen.

Juicy chicken, zesty Napoli sauce, super crunchy and tasty chips, the smoked ham and cheese were awesome. The salad was rubbish, the dressing tasted like praise or Kraft, it could have been a challenger. 8.5/10 DB

We travelled East tonight to the Royston hotel after hearing that they had a good Parma.

"I ordered some wedges before dinner and they were delicious so I was excited to see the Parma come out. It looked delicious, however the first bite of chicken revealed something very weird. The chicken was like a spam version of chicken. No texture, no moisture but also weirdly it tasted ok. I think they cooked the breast while it was still half frozen. A shame as the coleslaw, chips sauce and cheese were excellent. 7/10" Kristen.

The sauce was yum and the cheese super stringy and golden, the crumb was crunchy and tasty. But the chicken was odd, hard and not moist at all. Maybe it would be better on their Parma night. 6/10 DB

Actually really tasty - good cheese and sauce and the smoky ham, respect! Chunky chip option and coleslaw a winner but that breast was not fresh juicy or succulent - was it frozen? 7/10 jez

Dropped into a local for Parma night and boy it didn't disappoint.

Juicy chicken and great chips along with a beer for just $15. Epic win.

Delicious. 8.5/10 loved the sauce and the juicy chicken. Loved that they had mustard on the table. Didn't care for the salad.

Really tasty, the variety of cheeses were great and the crispy cheese made it even better, slaw was good, don't know about the fries though, Parma was on the small side but nice and juicy. 8/10

Smallish but delectable breast with sweet sauce and tasty cheese, however ham separation from crum and French fries not ideal.peas and mint in the coleslaw a nice touch! 7.8/10

Captain Melville's for Parma night and boy it didn't disappoint. We have finally found a pub that has knocked Metropolitan Hotel North Melbourne off its #1 perch after about 12 months. It was a very close call but Melville's has just edged out the metro.

"The Parma was amazing. The coleslaw was the best I've had but the chips were the only thing that let them down. Mine tasted like they were cooked in old oil. Overall, the Parma is knocking on the door of the metropolitan's masterpiece. I give it 9.35/10" - Kristen.

This Parma was my first in a while and it really delivered- yum yum yum! Great awesomeness in each bite and the portions were perfect. This is my new número uno Parma place 10/10 - Kas

My first Parma here and it was delicious!! Loved the cheese and the ham as well as the sides of coleslaw and crunchy chunky chips! More sauce!! Overall 9.6/10 Kat

I'm finding it very hard to fault this one. Chicken was succulent, good crunchy crumb, tasty sauce, very good cheese, smoked ham was a winner, great chips and coleslaw is a very underrated Parma side, this one was particularly good. I'm not sure what else it needed. But given there is a possibility I could have a better one, it's a 9.9/10 JT

I'm not sure how to fault this, everything was so tasty, great size, maybe and even punchier sauce as I didn't notice the sauce much, maybe that was the awesome balls of mozzarella cheese though. 9.9/10

Large parma with good chips and tasty salad, unfortunately the crum was left soggy from the bland sauce. 6.5/10 Jez

Average.. Reasonable chicken with soggy crumb, sauce wasn't too bad, cheese was chewy. A bit disappointing 6.5/10 JT

Too much cheese. I like the salad and sauce. The parma is too big. 6.5/10 IP

Of course we found a parma in Buenos Aires. It looks quite like a proper parma but the lack of ham killed it for me. Overall it was a 7.5/10.

About. To. Explode. Delicious salad, a bit of separation of the sauce and cheese from the parma, but forgiven due to the richness of the sauce. 8/10

Great sauce, tasty prosciutto and decent size. 7.5/10

Super tasty sauce, nice and rich, prosciutto was a great addition, thick parma could have been more juicy. 8/10

Very good sauce, up there with the best. Love a prosciutto option. Chicken was good, crumb only average. Chips ok, salad..was tasty, but we are talking salad. 8/10

Two venues tested tonight!

Amazing crunchy crumb, top quality chicken, tasty ham. Really clutching at straws here but maybe the sauce lacked punch. The chips were decent but I prefer them thicker. I wasn't a fan salad dressing, but I didn't come here for the salad. JT 9/10

Chicken was tender, moist and a good size. I liked the crunchy chips. More flavoursome sauce required. Friendly service, amazing company. Kat 9/10

A good pancrocrumb and decent size, sauce and cheese flavour underwhelming but overall 7.5/10

Pan fired which is a nice change, sauce and cheese should have been punchier and more flavoursome. The paprika chips were tasty. The mafia parma with salami and jalapeño had a great kick. 7.5/10

Returned to the scene of the best Parma from 2014 and it didn't disappoint. The Metropolitan Hotel North Melbourne still is the clear favourite.

"They still have the new and improved steak cut chips along with some coleslaw in the salad, which is an excellent addition. The Parma is still by far and away the standard for Melbourne parmas. 9.5/10." Kristen.

"They continue to improve! The addition of Coleslaw is a winner with any Parma. Probably only grandmother ham away from perfect. 9.8/10." JT

Another Parma night but this time in the city! Sweet tunes!

7/10 Crispy fries, refreshing and well seasoned salad. Juicy chicken but there should have been more sauce and less of the béchamel sauce.

Good cheese, reasonable to good chicken although the crumbs were a bit soggy, sauce lacked flavour, chips and salad were average at best. 6.5/10

Loved the cheese and quite tasty crumb. Unfortunately chicken not as juicy as it could be and no ham! 7/10

Huge Parma, panko should have been crispier, sauce needed some punch but the cheese was oh so good. 7/10 - DB

Parma was excellent but the sauce lacked herbs and the chips were cooked in old oil. The panko crumbs were a letdown but the salad was excellent. Overall a 7/10. - Kristen.

The Napier Hotel delivered a great Parma tonight. Overall the best rated salad of 2015.

"The Parma was awesome ( and this will be the only time I say this) the salad made the meal. The combination of the delicious cheese, mixed with the smokey Parma was amazing. It's pushing the top 5 list now." 9/10. Kristen.

Salad was the bomb! Didn't like the soggy fries. Parma was delish although it could have been more crispy. 7.5/10

The Parma sauce needed more taste and a little bit sweet. But good tender chicken. Salad needs improvement with tomatoes, cucumber perhaps. 7.5/10

'Very hard to fault. Kristen Holden has almost nailed it. Very picky but if I was to fault anything it would be the minor inconsistency of the crunchiness of the crumb, great sauce, but lacking something. Exceptional Parma' 9.5/10 JT

It reminded me of the movie Ratatouille when France's top food critic Anton Ego tasted the dish and was was taken back to his childhood. I was taken back to my mom's kitchen, cradled by love and good food. 9.5/10

Simply amazing. .5 better than the metropolitan hotel. Loved the crumb, sauce like grandmas special, ham like a suckling pig and cheese like (to rude)! Just delicious. Loved it! 9.5/10. EC

Lord Newry Hotel Parma was excellent. Overall excellent sauce and great crunch on the chicken. Chips were also unanimously excellent. 8.5/10 from the panel overall!

"This was the surprise Parma of 2014 and I am glad that it lived up to its previous glory. The chips were amongst the best I've had and the sauce was excellent. It's definitely in the top 3 parmas and is knocking on the door of the metropolitan that has dropped its quality lately. 9/10." Kristen.

The Edinburgh Castle Hotel was recommended by Danny so we popped on in.

Overall it was a 6/10. Here are the individual ratings:

"Tasty sauce, good chips, but frozen chicken heated up results in texture of rubber..6/10"-jez

"Thawed Parma was no good. The mash and vege option was good and the offer of doggy bags added points. Bland cheese. Average ham. Sauce wasn't amazing. Company was good. 6/10"
