This season’s elderflower champagne is coming along nicely. The recipe is one of many you learn at my Elderflower Masterclass, as well as the safety and ethics around foraging. After a number of years making wild sodas and wines I can tell you there’s an art form to it that you just can’t get in a single day.

It’s now midnight. I’ve been processing Elderflower for 6 hours after harvesting for 2.5hoirs this arvo. It’s always worth it but I still forget each harvest time just how long it all really takes to make sure I have enough to to brew the vinegar, the marshmallow, the syrups, the cookies and still have enough to share with those who need the benefits of the unadulterated plant. About an hour to go…..and then I can start on the bottle brush I also collected today 😭
Meet the gang!!! These little mates of mine will be hanging out in Berridale Lion’s Park tomorrow from 9am.
What’s YOUR flavour?
Elderberry
Magnolia Blossom
Red flowering currant, lilac and violets
My flavours are inspired by the seasons, our unique location and my very own family heritage. Sure, some of what I do is completely self-taught. But some has been handed down from Grandmother to Mother to Daughter and some has been passed down for centuries and more. I love being able to connect with that.
Autumn is in abundance!!!! Rosehips Rosehips Rosehips. I’m thinking syrup, bbq sauce, marshmallows and wine. 🌹🌹🌹🌹
