Disgorgment of the frozen Lees, dead yeast, begins with freezing the neck of the sparkling wine bottle holding the lees "on point". It takes 30 minutes for the lees to freeze whilst the bottles sit in -20 degree liquid, and as the bottles turn. Here we have Nocton wines' sparking going through the 'Methode Champenois" process.
The plug of extracted lees will be replaced by the winemaker's special "dosage" before being corked and labelled.

Tempranillo wine racked into tanks (to leave the Lees, dead yeast and solids behind before the wine barrels are cleaned by boiling water and high pressure. Once the barrels are cleaned the Tempranillo will be put back into the barrels for more storage.

South Hobart's Rivulet Walk this morning and a lovely, large Platypus came up to say "Hello". Tasmanian Platypus are the largest in Australia. This walk is less than 2km form Hobart's CBD. Where else in the world could you experience this?

This tour is a privately owned and operated business committed to providing THE very best wine tour experiences and a memorable day amongst the vines. Grapes have played an important role in the development of Tasmania – William Bligh planted the first grapes in Tasmania in 1788 at Adventure Bay on Bruny Island. In 1803 the first vines were planted on the shores of the Derwent, but the industry did not take root and grow until the 1970’s ….come on the tour and find out why.

StelaVino offers a full day wine tour each in one or more of the 4 sub-regions, including lunch and a complimentary glass of wine. You will sample award winning, cool climate wines as we visit 5 vineyard/cellar doors in one of the 4 sub-regions each day – the Coal River Valley / Huon Valley and D’Entrecasteaux Channel / The Derwent Valley and the southern tip of the east coast region.
