In the rugged terrain of northern Afghanistan, the ancient secret of kangina has been preserved for over 2,000 years. This ingenious technique allows grapes to stay fresh for months, extending their sweetness right through to Nowruz, the vibrant Persian New Year in spring. Through a meticulous process, grape clusters are nestled into dual clay-rich mud bowls, which are then meticulously sealed to craft a protective cocoon. These sun-baked mud spheres, each cradling about a pound of grapes, are then tucked away in cool, dark havens—be it a serene cellar or beneath the earth itself. This historical marvel of preservation utilizes no modern technology, yet it magically captures the essence of summer, providing families the luxury of relishing fresh grapes during the chill of winter.
