This is one of Turkey’s most popular dishes - kokoreç. Basically - lamb intestines wrapped around sweetbreads on a skewer and grilled on fire (preferably charcoal). 🫣 ⁠

Kokoreç is sold at street food vendors and in restaurants throughout the entire country. 🇹🇷⁠

After the whole skewer is cooked, slices of kokoreç are finely chopped and mixed with oregano, salt, red pepper, sometimes cumin, and fresh tomato. The mixture is then served in bread as a sandwich. 🐑⁠

You may know Cappadocia for hot air balloons, fairy chimneys & cave hotels. But did you know Cappadocia is also a foodie paradise. In fact, 2 of Turkey's most famous foods - testi kebab (pottery kebab) and mantı (Turkish ravioli) hail from Cappadocia. Thanks to its rich soil, high elevation and warm Anatolian sun, the region grows some of the best grapes in Turkey. Make sure to enjoy them au-naturale, as aside (rich dessert from grape molasses) and, of course, savour some local wine.

History tells how Noah’s Ark came to rest on Mount Ararat in northeastern Turkey, and his family celebrated with a special dessert. 🌄 Since their food supplies were almost exhausted, the family used what was left (primary beans, grains, and dried fruit) to create a pudding, now known as aşure. 🤩
