If you wonder what I like to cook in my household that ticks my flavour boxes and is easy and cooks in one pan, this is it.

Beef eye fillets with green peppercorns, red onion, mushrooms, and some homemade preserved lemons for bite!

Fry thinly sliced red onion, chunky cut field mushrooms and the thinner stems of broccolini in olive oil and unsalted butter, on medium-high heat until tender but not soft.

Push them to one side of the pan and add seasoned beef fillets.

Use the 4:4 rule (for medium rare) and set a timer. Fry 4 min on each side. Remove meat to dinner plates, add the green peppercorns and pour just a slurp of white wine into the pan. Push the heat up to the next level and blast for 1-2 mins stirring peppercorns and vegetables then pour over fillets and serve.

It’s that easy.

And the best muffin I’ve ever eaten - mango and coconut - light and moist and not the usual stodge most cafes sell.

DONOVANS at the Surf Club is buzzing today! We chose the special - Snapper with tempura prawns and salad.
Despite it being a FULL HOUSE they delivered a great meal - my partner commenting “It’s the best fish I’ve eaten in Coffs so far,” which is high praise from him.

Crisp coating, super fresh salad you actually want to eat, not swamped in dressing or balsamic - thank you!

I think it was a pre-Mothers Day Mothers Day lunch.

And a piccolo of sparkling was a nice pairing, along with the view of several surfers riding the grey and snappy waves.

We’re so lucky to have such a relaxed space to eat good seafood and the benefits of $15 annual membership - now due btw - cheap as chips!

We all love the Jetty Pav, so let’s check out their new menu...
Honestly hard to choose from the range of small plates - all sounded great!

Standout for my dining friend and I was the Prawn Toast. It arrived looking different to what we were expecting - in chunky pieces that were light and crispy and fabulous.

The mac’n’cheese arrived looking underwhelming but bite into one of those squares and - surprise!

It paired well with smoky stewed tomatoes. I’d have loved a dusting of chilli flakes or hot sauce on the side but that’s just chilli-loving me.

A really nice idea is the braised carrots with burrata and hot honey, only crit is the honey wasn’t hot which made me a little 😔

Despite that minor hiccup be sure to check out their new choices - Jetty Pav is a great spot to brunch (or breakfast, or lunch, or dinner - when do they sleep?) especially on a dreary grey day with huge windows and loads of natural light. And friendly smiling staff.

Nice menu additions and fresh new ideas at this one-to-watch venue.

Looking forward to a trip back for the Thai fishcakes and a load of other temptations.

Another wintery morning breakfast... and damn, not a glam food shot, but shoot, I’m feeling lazy.

Rhubarb - again - this time simmered in brown sugar and mandarin juice, with a generous shake of pure cinnamon served with a handful of bulk-buy toasted granola mix full of sunflower seeds and nuts, from First Fruits Wholefoods - love the name!

Jalna Greek style yoghurt and generous drizzles of Queen pure Canadian maple syrup - the name says it all, do not ever ever ever buy Maple-flavoured anything - you’re worth it!

Trust me, this is heaven on a plate on a rainy indoors morning. Energy food right there, perfect for before a gardening marathon ... ok, sprint.

Not pretty, but pretty delicious! Yes it looks a lot like winter here this morning. There’s an occasional bit of sunshine but mostly rain and big grey clouds. ☁️ Perfect weather for porridge 🥣 served with rhubarb stewed in orange, brown sugar, and grind of nutmeg.

Greek style yogurt and pure maple syrup on top 😋

What did you eat for breakfast?
