I LOVE eating salmon - but my fondest memory of salmon this year was not eating it, but making leather out of it!

Seated outdoors in a group of fishers and hunters and road kill foragers, I learned about skinning, cleaning, and tanning leather from various small animals - wallabies, rabbits, even fish - a little confronting for some of us, but fascinating and educational.

I was there for the salmon leather component and I wasn’t disappointed.
My finished piece of leather is soft and pliable and now waiting time and inspo to decide what to create with it.

I don’t fish, so this piece is a one off, and I want to do it respectfully and creatively.

Suggestions welcome…

I believe it’s important to utilise all the parts of an animal for food or apparel, not just the popular or on trend parts and support those who do farm and produce this way - with less wastage.

If you’re vegetarian or vegan, I respect your choice to be.

The end goal is to find - and support - local producers and growers, and on the Coffs Coast we are lucky to have passionate small scale farmers and producers.

Beautiful flavours for fish 🐟 or to make a Thai style green curry from scratch.

Nature produces so many incredible things to eat.

Especially from the citrus family.

I recently planted a blood orange 🍊 tree which has one orange on it. I should pick it off and let the tree send its energies to branches but I just couldn’t 😝 wait another year.

Best present ever … living where I live on Gumbaynggirr country and sharing it with family, friends, and tour guests.

This is one of my favourite trees - bark textured like animal hair, and a witness to decades of history.

A giant and soul affirming tree.
And one I point out when hosting art classes in the Botanic Gardens.

BIG UP to my friend Maria Bell who suggested fish cooked in galangal, Makrut lime leaves, and garlic - wrapped in turmeric leaves and cooked in foil. We had most of these growing - except for fish and garlic 🧄 😂

The snapper cutlets tasted fantastic!

We had hoped to spend Appreciation Day/Xmas Day IN our new home but it’s a long way from being finished - so we brought a gas camping cooker and had our BBQ amid the building debris!

So here we are, moments into a 5 hour commitment that is Moroccan Goat Stew (curry) one of my fave meals ever.

Also one of those meals that no matter how organized I am, the total cook and prep time all-ways drags out by an hour 🤷🏻‍♀️ in some way due to me.

I’ve adapted the original recipe to make it less fuss and retain all the spices and fibre instead of straining them out.
