My earliest memories of cou cou were my mother cooking it once in a while when I was growing up in the States. 🇺🇸

Have to admit the okra-based dish used to make my tastebuds bristle, but since moving to Barbados it’s grown on me and now the green banana and breadfruit varieties are my faves.

A part of four national dishes, this simple and cheap dish has been around way before the idea of independence was on the menu. The gooey cornmeal dish is likely to stick around for a while. 🍽️

A coucou stick is not only a useful cooking utensil, but also a "rod of correction" that many Bajan children have encountered 😅

Bear Grylls (Man vs Wild T.V show) insists that everyone should watch the sunrise once a year and I agree.

Light informs the way we see things.
A bright day is hot, a dark sky looks cold.

We follow rays of light like white lines on a highway, leading our eyes to where the beam falls.

This is probably one of the reasons why a sunset is universally recognised as beautiful, and why dusk and dawn have locals cruising around the coastline from east to west like hands on a clock.

Fun Fact: These fluffy treats are said to have originated from the island's Scottish settlers in the 17th century, who brought over their recipe for bannocks (a flatbread with a scone-like texture).

Today, Bajan bakes come in many flavours and are enjoyed primarily for breakfast or as a dessert. You can find bakes at spots like near the Garrison. Stop by to enjoy breakfast off the beaten path!🚶🏽‍♀️

💡🍞 A Barbados cutter is a traditional sandwich on a roll using Bajan salt bread. The most popular choices for the filling are a choice of either ham, fish cheese or liver.

B.A.R Cutters is a rum shop in Bridgetown and also a food truck at Savvy on the Bay near Browne's Beach. They have delicious, award-winning cutters and are best known for their lamb and fresh tuna cutters (which I've tried myself - fantastic!).

You can't lose with this classic tasty treat, get down to B.A.R Cutters! ❤️
