We just wanted to share a European aperitif favourite for your summer enjoyment. A special little treat that might have you looking forward to an upcoming adventure - enjoy a chilled glass of aromatic Limoncello - cultivated from beautiful surroundings of Gulf of Naples, the Amalfi Coast and Sicily.
INGREDIENTS: 🍋
- 6 unwaxed lemons (preferably organic)
- 750 ml. vodka, preferably Belvedere
- 2 cups sugar
- 1 cup water
DIRECTIONS
1. Wash the lemons well, scrubbing thoroughly. Using a vegetable peeler, remove the rinds from the lemons, being careful not to include any of the white pith. In a large sterilized jar, combine the lemon rind with the vodka. Seal with a lid and let stand in a dark place for 6 days.
2. In a small saucepan over medium-high heat, combine the sugar and water and bring to a simmer, stirring until the sugar dissolves. Let cool. Remove the lemon rind from the vodka and add to the syrup. Reseal vodka jar.
Transfer the syrup and rind mixture to another sterilized jar and seal with a lid. Let both jars stand in a dark place for 3 more days.
3. Remove the rind from the syrup.
Slowly add the syrup to the vodka, adjusting for desired sweetness.
Strain the mixture through a coffee filter until clear and store in a sealed sterilized bottle.
Enjoy!

The remainder of our time in Dubrobnik was spent enjoying a boat ride along the coastline - before boarding our ferry to Korcula. Korcula has offered a relaxing time and had a quiet island vibe. With a populations of approximately 16000 and far less tourists than many of the other Croatian destinations, if feels like we have stepped back in time and found a true undiscovered gem. Nobody loks their cars or homes as it is known to be one of the safeset destinations in all of Europe. We started off with a hike throught the forest, followed by a private afternoon wine tour around the island.
