🎄 Day 9 of our Safari Advent Calendar brings the recipe you’ve been waiting for—the famous Nigerian Jollof Rice! 🍅🍚 A perfect addition to your holiday table, this dish is vibrant, delicious, and full of flavor. Let’s get cooking! 🔥✨
Ingredients:
• 2 cups of long-grain parboiled rice
• 1/4 cup vegetable oil
• 1 large onion (sliced)
• 4 large tomatoes (blended)
• 3 red bell peppers (blended)
• 2 Scotch bonnet peppers (adjust to taste)
• 3 tablespoons tomato paste
• 1 teaspoon thyme
• 1 teaspoon curry powder
• 1 teaspoon smoked paprika
• 1 teaspoon ground ginger
• 1 cube chicken or vegetable bouillon (optional)
• 2 cups chicken stock (or water)
• Salt to taste
• Optional: sliced vegetables (carrots, peas) or protein (chicken, shrimp)
Instructions:
1️⃣ Prepare the Base: Heat the vegetable oil in a large pot. Add the sliced onions and sauté until golden. Stir in the tomato paste and cook for 2-3 minutes.
2️⃣ Blend and Simmer: Add the blended tomatoes, peppers, and Scotch bonnets to the pot. Stir in thyme, curry powder, smoked paprika, and ginger. Simmer on medium heat for about 10 minutes until the sauce thickens.
3️⃣ Season and Add Stock: Add the chicken stock (or water) and bouillon cube. Bring the mixture to a boil.
4️⃣ Cook the Rice: Rinse the rice thoroughly and add it to the pot. Stir well to ensure the rice is coated with the sauce. Lower the heat, cover, and let the rice cook on low heat for 20-30 minutes.
5️⃣ Fluff and Serve: Once the liquid is absorbed and the rice is tender, fluff with a fork. Add optional vegetables or protein, stirring gently to combine.
