Småkageriet is a professional artisan bakery that utilizes its own flour and bakes småkager (cookies) and knækbrød (a typical Nordic flatbread). On Saturdays there’s a pop up bakery which allows locals to stop by for breads, cakes and pastries as well. Jette & Jes make some of Denmarks’ best artisan “bolsjer” in their charming workshop in Ebeltoft. Bolsjer are hard candies made of boiled sugar with added flavors and colors. The process is fascinating to witness. Here we follow the production of Bismark Klumper that are typically white and red and have a refreshing peppermint taste. Rød grød med fløde. This is hardly Denmark’s most famous dish in terms of gastronomy, but when it comes to giving a foreigner a Danish tongue twister this is what we have them say. It’s practically impossible to pronounce unless you’re born and bred! It translates to red porridge with cream and it’s a terrific summer dessert. Just throw your fresh garden berries in a casserole for a few minutes with a little water and sugar. Serve chilled with lightly whipped cream @ Denmark

Mols Bjerge is a magical mystical place with signs of human activity since ancient times - here’s a stone age burial site (DK: Runddysse) this one is said to have been used for offerings to the Nordic Gods. The next pictures feature a very traditional lunch platter - yet not so common (as it was homemade/locally sourced): warm smoked salmon, smoked ham, spegepølse (a traditional smoked salami), frikadelle (Danish meatball) and cheese with homemade Jam from Holmgaard close to Agri @ Mols Bjerge National Park

A “Molbo” story:
One day, when the Molbo people had heard that the enemy could attack their area, they thought of what they would want to put safely out of reach of the enemy. The one thing that was dearest to them was their church bell. While they thought of a good hideout for it, they finally managed to get it down from its tower. They agreed to put it at the bottom of the sea. They got it onboard a boat and lowered it deep. But as soon as it had gone down, the Molbo folks looked at one another and wondered how they would find it again once the enemy was gone. After a lot of thought one of them shouted: we will put a mark on it! So he got out his pocketknife and cut a cross on side of the boat they had thrown the bell aboard.

Snobrød or twist bread. A brilliant summer activity and treat for the kids. Make sure the stick is of the hard wood kind and peel it. The dough can be a normal yeast bread dough which is twisted in a sausage shape around the stick. After pulling it off the stick it can be stuffed with for example marmalade 😋

Softice - a note of nostalgia as this was something I loved as a kid growing up in Denmark even if I suspect the origins to be American. Coming back as an adult I sort of wonder what it is made of as you find it throughout Denmark. Good makers use good ingredients (e.g. cream and real vanilla) whereas rumor has it that cheap versions are made with powdered milk and real bad rumors speak of pork fat (probably just folklore?!). Anyhow, it’s instant ice cream made in a special machine that aerates the mass and it comes out real creamy, pretty delicious and usually well covered in for example chocolate. The fast cooling machines that mix and cool the ice cream mass, give aeration resulting in a soft consistency void of crystals (that are super annoying in homemade ice creams but hard to avoid no matter the effort). Happy to be back and turn on the clever(!) tastebuds
