Part chef, part food designer, part raconteur, Xavi’s is a universe where mushrooms glow, candlesticks are melted down and dipped in black bread, and wisps of coffee float overhead like cumulous clouds.

To understand him is to hold up the looking glass and allow the boundaries of fiction, fantasy and food to blur into new and magical culinary universes.

From arroz to zamburiñas, La Boquería is a universe full of magical expertise and deep lines of family history. Nearly 350 dizzying displays of fresh fruit and vegetables, plump figs and green olives, mountains of spice, colorful tins of paprika and sardines, salt cod, cheese wheels, tongues and livers, marbled tomahawk cuts and heavenly thin slices of nutty jamón. From the high altitude pastures of the Pyrenees to the rice fields of l’Empordà, a walk through its aisles is a celebration of flavor, a cacophony of the day’s catch. This is a living history lesson on the Catalan spirit and its irresistible culinary tradition.

“Weary of one too many mediocre seaside paellas and longing for the palate and pace of Spain’s hinterland, I set out on a cool February morning from Málaga Central for Antequera, a picturesque white-washed village of some 40,000 souls tucked into the hills of Málaga, and the birthplace of Charo Carmona.

In 45 minutes and 2,000 feet of ascent we reach la vega, a fertile plain that has nourished poets, priests and warriors since the Bronze Age. Dressed in all white, Antequera appears.”

An honor to spend time with, research and eat in Charo’s restaurant in Antequera, Spain, the latest experience for S.A.L.T. program. At sea with Sergi Basolí and his number two, a Tibetan terrier named Nirvana.

Not long ago Sergi bought an old wooden merchant boat from an old Galician sailor. Determined to keep traditional sailing alive, he navigates using a magnetic compass, a spyglass for orientation and raises his sails by hand. He christened his boat O Ria de Ferrol after the fjord where he met the old man. Today Sergi whisks guests to the secluded aquamarine coves of the Costa Brava where Nirvana is first to jump in.

Tucked into a jagged azure cove, Portbou is the last village along Spain’s storied Costa Brava. Start the day driving the mountain ridge into France for a butter croissant breakfast and swim, then cross back into Spain for a paella lunch before retiring to the beach for a midday siesta.

Short for Sea And Land Taste, S.A.L.T. is a novel approach to cruising. A deep dive into local cuisine and family tradition. True storytelling at its best.

S.A.L.T. challenges the old model of cruising by taking guests further. Into the kitchens and farmhouses and multi-generation cellars to find a country’s true artisans. It’s also a moment to stop and realize how difficult these past 18 months have been for so many people & small businesses. I hope we’re past the worst and that renewal, health and brighter days await all of us.

These 3 bottles share an extraordinary story.

All are 100% morenillo, a nearly extinct grape native to Terra Alta, which thanks to the remarkable work of pioneers like and are not only reviving this ancient variety but also putting out some of the most delicious wine in Terra Alta today.

In a region dominated by big grenache, the morenillo has a lower ABV at 13.5-14% and the finesse & fruit reminiscent of a pinot. These wines were all but abandoned last century due to their low yield, and today are prized for that same reason - only 1296 bottles of the 2017 Lo Morenillo were released. Grown on vines up to 100 years old and aged in French oak barrels and clay amphora, the result is both homage to Terra Alta's past and sign of a bright future.

And the name? Due to its subdued complexion, the locals give an endearing diminutive for dark - "morenillo”.

When in Barcelona, a visit to Vila Viniteca is an absolute must.

Founded in 1932 and run today by the 3rd generation is the reference for fine wines in Spain.

Their flagship in Barcelona's Born district is a feast for the eyes. Next door is their tasting room and across the street their deli, where white clad jamón masters wield sharpened knives with surgical precision.

Tomorrow regional confinement in Catalonia is being lifted for 2 weeks before Easter. If done safely & responsibility this measure will be extended in April - in time to enjoy first dips in the sea & final runs in the Pyrenees.

Yesterday marked 1 year since Spain's national confinement. 365 days in, a feeling of cautious optimism is beginning to creep in.

Wherever you are, please stay safe, be responsible and together let's begin to welcome back the excitement, joy & necessity of travel.
