Wine and chocolate pairing is always a good idea! Last Sunday, we celebrated Benoît Nihant’s 12th birthday with a glass of Rasteau, a sweet red 🍷 with notes of spices, currant and roasted cacao. It paired perfectly with their complex trinitario Mayan Red bar and their new black sesame praline. Happy birthday! 🍾

This week I wanted to try something sweet but different, like this surprising cumin praliné from . The couverture is 68% Tanzanian chocolate and the filling had much more cumin that I would have imagined... But I heard it helps with digestion!

Today we go to Benoît Nihant's Chocolate Shop 🤩 where our favorite guide can help you choose between this overwhelming selection of stylish chocolates.. 😍🍫
All of them good of course, although we did fall in love with the Salty Caramel Praline 🤫
's chocolate is not only amazing, refined and savory it's also sustainable, eco-friendly and respectful of local producers of cocoa.
We love his dedication and passion to bring beans to bars that are not only incredibly good but also helping local cocoa producers get recognition and fair trade. 💪🥰

What a wonderful tour!!! We got to taste biscuits, cookies, waffle, coffee and a large and unique range of chocolate in Brussels. Yasmine was a fantastic host, enthusiastic, passionate and very knowledgeable. Rather than walk randomly into a chocolate shop we choose to experience a personnal insight with a mix of belgian and Brussels culture, history thought chocolate/confectionery and an amazing sweet treats tasting. We absolutely loved the concept of 'tasting chocolate as wine'' and so inspiring to know the story of Mary the first female chocolatier in Belgium. We learnt so much during this tour. Thank you Yasmine for all your great recommandation and your kindness 🍀

With this week’s Bean to Bar Tasting, we feel like Silk Road’s explorers discovering Southern Indian spices with : 70% Idukki Hills (Kerala, 🇮🇳) A well structured blend of forastero and trinitario beans intercropped with fruits and spices. The nose is intense, heady, peppery and a slightly fruity taste lingers on the palate. The Indian state of Kerala is well known for its production of spices, especially black pepper (96% of the national production), cardamom and nutmeg.

Sweet Brussels
