Let’s continue our story about the organ in Saint-Gervais-Saint-Protais church by adding some music!
So, we have already mentioned that eight members of Couperin family were organists playing in the church from 1656 until 1826. Some of them were not only playing, but composing too: Louis Couperin (1626–1661), and François Couperin (1668–1733) were authors of celebrated masses and other compositions for the organ.

Let us show you today the oldest organ of Paris.

The grand organ on the Tribune above the entrance at the back of the church is a registered historic landmark. Its first version was constructed by Mathis Languhedul of Flanders in 1601; followed by a new instrument made by the French Thierry dynasty, between 1649 and 1714; then rebuilt by François-Henri Cliquot in 1769.

This is the organ that was played by the famous Couperin family, eight members of which were organists in Saint-Gervais-Saint-Protais church from 1656 until 1826.

With arrival of January windows of Parisian bakeries tempt passers-by with the galettes des rois – “king cakes” - usually topped with a golden paper crown.
Its history goes back to the 14th-century. Traditionally, it’s served on January 6th – the 12th day of Christmas – to celebrate the Epiphany, the day commemorating the arrival of the Three Kings to the manger where Jesus was born. Today, it’s eaten throughout the month of January and for non-religious people is a part of winter holidays celebration together with family and friends, regardless of religious background.
There two main types of galette des rois: in northern France, it’s made of pâte feuilleté - puff pastry - and is stuffed with a dense, creamy almond paste called frangipane. In the south of France, you’ll find a brioche-style cake covered with candied fruit. Other variations vary from shortbread-style, popular in Western France, to those that have alternate fillings, such as chocolat-poire (chocolate-pear) or raspberry.
However, galette des rois is more than just a delicious desert. It’s also a huge entertainment because every cake has a hidden surprise in it - a fève, once a fava bean, now a porcelain or plastic figurine. According to tradition, the entire cake is divided so that every guest receives a slice, plus an extra piece - a symbolic slice for any unexpected visitor or poor person that could pass by. Like this, everyone has a chance to try their luck and “tirer le rois” – “draw the kings” – from the cake. The person who discovers the fève in their serving is declared le roi (the king) or la reine (the queen) and gets to wear the golden paper crown that comes with cake. This can get quite competitive! Thus, in order to avoid cheating, traditionally, during the slicing of the galette the youngest child would call out the name of a person to receive each slice from underneath the table so that the server could not be accused of playing favorites.
If you are tempted to try your luck, hurry to a nearby bakery: Parisian boulangeries sell galettes des rois till the end of January.
