🍹 Orange Loaf with Coconut
Ingredients
2 Eggs
1½ cup Sugar
Orange Zest and orange bits from 1 orange
Half cup orange juice
100g unsalted Butter at room temp
2 cups All-Purpose Flour
3 t Baking Powder
Optional coconut topping

Instructions
Preheat the oven to 190°C.
Mix eggs with sugar until smooth
Add orange zest, orange juice and soft butter.
Mix with the electric mixer if possible
Separately mix flour and baking powder together
Then add this mix well with the mixer.
Add orange bits and combine
Pour batter into a bread tin lined with baking paper.
Option : Sprinkle coconut flakes on top

Bake for 1 hour or until properly cooked.
Check with a toothpick
Remove from oven and pour more orange juice over
Let it cool, remove from tin then set on a wire rack.
Slice and serve with butter and jam
