Low-Calorie Dairy-Free Mint Chocolate Brownie Ice Cream Recipe

Craving a delicious, guilt-free treat? This low-calorie, dairy-free mint chocolate brownie ice cream hits the spot! Packed with rich chocolate flavor and refreshing mint, it's perfect for anyone looking to indulge without overdoing it. Here's how to make it:

Ingredients:

60g oat flour

30g cocoa powder

1-2 tbsp brownie powder

1/2 large egg (or 1 small egg)

30g crushed mint/peppermint chocolate

100ml plant-based milk

30g soya yogurt

20g baking sweetener

1/2 tsp baking powder

Pinch of salt

1/2 tsp vanilla extract

Instructions:

1. Mix the Batter: In a bowl, combine the oat flour, cocoa powder, brownie powder, baking powder, sweetener, and salt. Stir to blend the dry ingredients evenly.

2. Add Wet Ingredients: Mix in the egg, plant-based milk, soya yogurt, and vanilla extract until you get a smooth batter.

3. Fold in the Mint Chocolate: Gently stir in the crushed mint chocolate for that refreshing twist.

4. Prepare for Air Frying: Pour the batter into a small dish or ramekin suitable for your air fryer.

5. Air Fry: Preheat the air fryer to 160°C (320°F). Bake the brownie for 15-18 minutes. Check with a skewer — it should come out with moist crumbs.

6. Cool and Freeze: Let the brownie cool completely, then crumble it into chunks. Stir the chunks into your favorite dairy-free ice cream base or layer them between scoops for an irresistible treat.

Calories:

This recipe makes a single serving, clocking in at approximately 300-350 calories, depending on the specific plant-based milk and chocolate used.

As we wrap up 2024, I'm looking ahead to an exciting and challenging new year. Here’s what I’m striving for in 2025:

🏊‍♂️🚴‍♂️🏃 Complete my first triathlon. It’s been on my bucket list for a while, and this is the year I’m making it happen!

🏃‍♂️ Run a sub-3-hour marathon. Pushing my limits, one mile at a time.

🤝 Train with friends. Because fitness is better together. Surrounding myself with people who inspire and motivate me.

💪 Help others achieve their goals. I’m committed to using my knowledge and experience to guide others on their journey, no matter where they’re starting from.
