Same here! So here are my top tips for baking great fresh bread in a short amount of time.
1. USE YOUR FRIDGE: After kneading the dough, rise it overnight in the fridge. The dough will rise more slowly in the cold plus this helps develop great flavour in your final bread.
2. NO-KNEAD BREADS: This technique uses lots more water in the dough. Simply mix and cover, then leave to rise (often overnight in the fridge) before shaping into a loaf pan or as rolls and baking straightaway. Fresh bread for breakfast with minimal effort!
3. BATCH BAKE: Got a bread you love to bake? Make the most of having your oven on and make triple or even more than you usually would. Same length of time but much more bread - and you can freeze the extra loaves for later.
4. BAKE QUICK BREADS: Explore baking soda breads with different flavours or try out 2-ingredient flatbreads. Both breads are ready in minutes, perfect if you're strapped for time.
