Your starter contains all the yeast that are going to produce gas and rise your dough.
To do this, the yeast need to be active and producing gas BEFORE they go into your dough.
Usually you do this by feeding your starter anything up to 12 hours before you want to start making your loaf.
But how do you know if your starter's ready?
Here's a quick two-second test to check.

This is my favourite way to make pizza at home.
Thin, crispy, chewy pizza bases that are full of flavour.
This process does take time. But you don't need to hang around whilst your dough rises.
Meaning this is a dough you can make whilst you get on doing other things.
