1 Pot Broccoli Curry 🥦
250g PACK’D Organic Broccoli florets🥦
2 garlic cloves, minced🧄
1 tbsp minced ginger🫚
1.5 tbsp curry powder
Handful tomatoes🍅
1 can chickpeas
1 can coconut milk
A handful of coriander🌱

200g PACK’D Organic Sweet Potato 200g
PACK’D Organic Cauliower Rice
1/2 onion, diced
olive oil
salt
1/4 cup non-dairy cream cheese
1 tbsp minced garlic
1/4 cup veg stock a handful of grated vegan cheese🧀
1 tbsp nutritional yeast
Place the onion and sweet potato on a baking tray and drizzle with oil. Roast until soft and cooked through. Boil the cauliower rice until tender, then strain. In a blender, combine the roasted sweet potato, onion, cauliower, cream cheese, garlic, and vegetable stock, and blend until smooth. Pour the sauce over your cooked pasta, stirring in the vegan cheese and nutritional yeast until well combined.
