Beetroot Hummus

THE PINKEST BEETROOT HUMMUS
1x tin of chickpeas (& liquid)
2x fresh beetroots
2x garlic cloves
1x lemon
5tbsp tahini
1tbsp cumin
1tsp bicarbonate of soda
Ice cubes
Salt
1. Boil the beets in salted water until fork tender (30/40mins).
2. Drain the chickpeas, reserving the aquafaba, then boil with the garlic cloves until soft (30/40mins)
3. Peel the beets & chop up into chunks.
4. Blitz the cooked chickpeas up in a food processor until a course paste forms, then add 100ml of the chickpea water, the garlic & the beets.
5. Add the tahini, then blend before adding a couple of ice cubes for extra creaminess.
6. Add the juice of 1/2 a lemon (more if you want), cumin & salt. Adjust seasoning & consistency to your taste!

🌟 You will need for 4 portions:
💓 4 beetroots (cooked and peeled)
🌟 For the cashew cream:
🤍 1/2 cup cashew nuts, soaked for min. 2 hours or boiled for 10 min.
🥛 1/2 cup plant-based milk
🍋 1 tbsp lemon juice
🧂 salt
🌟 For garnish:
🌿 Fresh dill
🍶 Olive oil
🍋 Lemon juice
🥜 crushed walnuts
🧂 salt, pepper
🌟 Method:
🤍 Begin by blending all ingredients for your cashew cream and let sit in the fridge to firm up and you are ready to plate.
🔪 Thinly slice the beets. It works best with a mandoline, but of course you can do it with a knife too, if you don’t have one.
💓 Spread the cashew cream on the plate and layer the beetroot on top. Drizzle with lemon juice, olive oil. Season with salt & pepper and garnish with fresh dill and walnuts.

Beetroot & Goat's Cheese Risotto
he cold weather calls for this delicious Beetroot and Goat’s Cheese Risotto ❄️
Nutritious and super filling, it’s the perfect low-cost meal for all the family. Rich in flavour, this dish is the perfect intro to beetroot for any newbies!
Ingredients
1 shallot - finely diced
1 thumb of ginger - finely diced
200g risotto rice (like arborio)
2 cooked beetroots
Veg stock or water
Topping:
100g goat's cheese
20g walnuts - roughly chopped
10g chives finely chopped
Method:
Sweat the shallot until soft and add the ginger.
Add the rice and let it sweat for a minute or so then gradually add the water or stock, stirring in between additions.
While that’s cooking, blitz the beetroots in a blender to a purée.
When the risotto rice is cooked al dente, add the beetroot purée and stir through.
Spoon into bowls and crumble on goats cheese along with the walnuts and chives.

- walnuts
- honey or maple syrup
For the marinade:
- 1 lemon (zest and juiced)
- 2tbsp olive oil
- 1tbsp cider vinegar
- 2tbsp honey
- salt
- 1tsp balsamic vinegar
>> once the beetroot is cooked and peeled (in case you don’t have a precooked one) cut the edges first and grate the middle part into thin slices -> combine with marinade in a large bowl and let it sit for a while … chop the walnuts into small pieces and stir them on a pan with honey or maple syrup … serve with rucola, balsamic vinegar, goat cheese and enjoy 💛
