At 6pm, it's time to leave Hever Castle. If you're a lowly day guest, at least. If you're staying the night, it's time to pack a picnic, take a bottle of wine and stroll the grounds of what is now your own kingdom.

You can also take tours of rooms not normally open to the public, as well as learning about the history of the castle, from the lives of its famous residents, most notably Anne Boleyn and William Waldorf Astor, to the War of the Roses, depicted in a fabulous art collection in The Long Gallery.

The castle, is moated, crenellated and supposedly haunted, just as a classic castle should be. The grandeur of the bedrooms and the vaulted, panelled dining room, complete the feeling that you're living in a piece of history. ⁠

"In the cool, troglodytic cellar of a former 15th-century priory, Isabell Suire makes red Puy Notre Dame cabernet Francs, earthy and rich chenin blancs and crisp Cremant de Loire, the sparkling wine that rivals a good champagne but with a price tag of no more than €8 a bottle.

Isabelle is happy to organise tastings in her ancient farm for anyone who is interested, but of course it is the done thing to buy a case of wine (at least!) after the tasting."

Some owners pick you up from the local station, some from a nearby bus stop, but very few will come and get you in a boat. Happily, for anyone truly looking to leave the world behind, that's the only way to get to the Lighthouse Cottage on Eilean Sionnach.

Once you've sped over the sea from Skye, you're left to your own devices. With nothing on the island except what you take with you, an exceptionally beautiful cottage and a few Skye treats as a welcome.

When the tide is right, you can pick your way over the rocks to the Eilean Iarmain Hotel and Am Praban bar, but the rest of time is spent in blissful, enforced idleness, watching for otters and porpoise, reading, napping and maybe climbing the generously named Mount Doglet.

It's a lovely quote, but we think it CAN get better. You could be a guest instead, sitting in front of the same lovely views and sampling Fran's exquisite work without lifting a finger that isn't wrapped around cutlery. Then maybe a walk along the coast before you head over to bed in the beautiful rooms in the annex.

There are some definite flourishes to the décor of this pub in Windsor, not least the carousel horse in the bar, but when it comes to the food and drink, it's all about doing the simple things brilliantly.

There's a good spread of local ales to go with classic British dishes, the more unusual specials or anything from the blackboard of bar snacks with a gorgeous courtyard garden to enjoy it all in if the weather is right.

The pub is dog friendly and staff are welcoming, knowledgeable and wonderfully relaxed about everything, except attempts to ride the horse.

A fabulous stay in an iconic building on the Penzance skyline.

These rooms, under the bell tower of what was once the First National School, have been crafted into a beautiful open-plan apartment by the experienced hands of Christen and Chris from Middle Colenso Farm, who took the first two photos on this post.

The views are stunning and the space has a refined, simple elegance that frames them perfectly. Spread out below you are Chapel Street, with its independent shops and cafes, the lively artistic town of Penzance and the magic of the Cornish coast.

Visit St Michael's Mount, swim in the open-air Jubilee Pool, hit the coast path or take in a show at the cliff-top Minack theatre, before coming home to put the kettle on, settle into the window seat and watch the sun set on the sea.

Helen Lantsbury has lived in Bordeaux for almost 20 years. When we spoke to her for Mon Pays, our series of guides to French regions, created by local residents, she mentioned a few restaurants and cafés, of course, but said its also a lovely place to picnic. Her husband runs a deli, so we reckon she knows what she's talking about.⁠

Make a quick stop at La Fromagerie de Pierre, then her favourite bakery, in Cours de la Martinique, before heading to the Jardin Public in the centre of town or over the Garonne to the large park in the Bastide neighbourhood. ⁠

It's a simple, superb way to enjoy la vie Bordelaise.⁠

"If you’re in the mood for a sophisticated day at the seaside, head over the water to Cap Ferret for oysters. While you could drive round to the town, which hangs on the end of a hook of land across the bay of Arcachon, the small ferries that nip over the bay are much more fun.

Book in advance but don’t bank on the boats running promptly, as departures can be chaotic. As you cross, you’ll see the oyster beds all along the coast. Almost every building on the water has turned itself into an oyster bar and you’ll get a much better deal if you take a walk south, away from the dock, once you arrive. For a handful of Euros, you’ll get a plate of incredibly fresh oysters, a great bottle of white wine and a delicious lifelong memory."

Marche, on Italy's east coast, level with Tuscany on the west, is one of the country's less-explored regions. This has its pros and cons. There are fewer famous hotspots and you won't run into so many crowds but it can also be harder to plan a trip without so many well-worn paths to either follow or deliberately deviate from.

At Villa Oliveto, they have a simple solution to this problem - a concierge service. Before your trip or during, you can have everything from vineyard visits to yoga, cooking classes and private chefs arranged by staff who know the area intimately. They can find bilingual guides to give you a detailed tour, or set you up with electric bikes or vintage cars if you'd rather go solo.

However you discover it, Marche will almost certainly win you over with its quieter coastline, great wines (most commonly Montelpulciano and Verdicchio) and hilltop towns that rival anything its more famous neighbours have to offer.

It's all down to bees.

The extensive wine list at this old, timber-framed inn comes mostly from the Balfour winery. They put a lot of their success down to hugely reduced chemical use, which is enabled by the biodiversity that well-pollinated plants and rewilded areas of their land help to promote. Healthy land means healthy vines, healthy apple trees for making cider and even a good supply of flavoursome honey.

So if you happen to be at The Windmill, enjoying a glass of something red, white or green, remember to raise a toast to the bees who make it all possible.

My favourite place: Patrícia Magalhães, owner of Morphosis, Portugal

I started my winery, Morphosis, all by myself in 2013. I loved the simplicity of working directly with nature. We produce around 6,000 bottles a year now but we've also opened up some houses on the estate for people to visit. Having people here makes every part of the process a source of great memories, it brings everything together.

The Douro is one of the oldest regions in the world and a magical place. You can take boat trips down the river to see the vineyard slopes from that perspective, or visit one of the many viewpoints established high up on the hilltops. My favourite is Ujo. It's a place with soul, there's something special there and you feel completely surrounded by nature.

I hope that the people feel the same when they come and stay, when they're among the vines or having lunch in the shade of the trees.

An end, or a beginning?

Depending on which way you travel, this could be the first or last stop on an incredible journey. It's at almost the southernmost point on The Wild Atlantic Way, a notional trail that winds around the coast of Ireland for over 2,500km.

Along its route you'll find everything from ancient standing stones to whale watching, grand gardens, beautiful villages and more than the occasional pub with live music.

It's all mapped out on a dedicated site that's an amazing mine of information. With places like this to stay in while you travel, it's got to be high on your list.

Bring: Sunglasses, towel, chain mail.

If you're sitting on this rooftop balcony in the town of Villajoyosa in late July, don't be alarmed to hear gunfire and a lot of shouting. In fact, you should head down and take a look, because what you're hearing is the Festival Moros Y Cristianos, which centres around the re-enactment of a battle fought in 1538, when Moorish invaders attacked the town.

If that makes you think of a few people in questionable period costume waving plastic swords at each other, think again. This is a huge undertaking, with processions, ornate costumes and actual ships, which land troops on the harbour who then fight their way up to the castle. There are food stalls, activities and an incredible explosion of sound and colour all across the town.

For the rest of the year, Villajoyosa, known simply as La Vila by the locals, is a much quieter place, a refreshing contrast to its hotspot neighbours Benidorm to the east and Alicante to the west. None of the big hotels chains have moved in (yet), meaning tourism is done on a smaller, simpler scale.

There are great paella places, a famous chocolate factory, rows of colourful houses on the waterfront and a sleepy coastal feel. At least until the cannons go off.

Life at this peaceful farmhouse in Lot is mostly a breeze, but it does force you to ask one very difficult question. What are we doing for lunch? It might seem simple, but you have three equally tempting answers.

The first is the rural France classic - bread and cheese from the market, set up on the table by the pool.

The second is called Le Gindreau, a two Michelin-starred restaurant 20 minutes down the road that offers something called a truffle brunch.

The third is a local institution, also about 20 minutes away in Pomarède, called Chez Jeanne, where a 5-course lunch with wine costs less than 20 Euros and gives you an unrivalled introduction to traditional local cuisine.

Of course, if you're here for a few days, there's an obvious solution...

This beautiful lodge was once an abbey, home to an organisation known as the Premonstratensians, whose name is an enthusiastic expansion of Prémontré, the place in which the order was founded. Rather than being monks, they were Canons Regular, a different form of religious group that has nothing to do with the cannonball you can see in the grounds.

The grand gate of the abbey, having admitted canons and avoided cannon fire, still remains. The lodge itself is hundreds of years old and the gardens have been maintained along lines laid down centuries ago.

This is partly due to the domaine's Historic Monument status, but also
because owners Laurence and Clément, one of whom works who work in art and the other in museum curation, have preserved its history and added a contemporary layer. Furniture by Eames, Jieldé, G*e Aulenti and Paola Navone now stands where rough wooden benches once did, but in an atmosphere of rural peace that the canons would still find familiar.

A visit to this less-explored area of France, some way south of Calais, north-west of Amiens, isn't one for ticking off big-name attractions, more a place to reflect, relax and potter in the garden. Just as it's always been.

Porto has a slight grittiness weaved in among its bold colours and the bright lights of rooftop bars. It's a place that feels alive, changeable and changing. It's always been an alternative city, home of poets, writers and rebellion, but now it's establishing itself more and more on the tourist map, taking on Lisbon as the main Portuguese destination.

Is this a good thing? Time will tell. While tourism brings economic benefits it can also lead to homogeneity. But it doesn't have to. Porto's wild, rebellious spirit can continue to flourish if we support independent providers - shop local, eat local and stay in places like Menina Colina.

Four partners took over this building, unoccupied for 30 years, and transformed it into a vibrant mixture of historic preservation and modern style that perfectly captures the spirit of the city. It's a great time to visit Porto, while places like this fly the flag for everything it is and will hopefully remain.

Most people planning a walk to St Michael's Mount need to check the tide times, but guests staying at The Godolphin can just glance out the window to see if the causeway has emerged from the receding water yet. Then it's simple enough to stroll down to the beach and over to explore the cluster of buildings on the island.

The owners also recommend the walk along the coast to Penzance, especially in autumn when the bird reserve you pass along the way attracts rare migrants like bitterns and water rails, although the spring wildflowers aren't bad either.

Either one will help you work up an appetite for dinner and you might even hope the weather turns for when you dine. When the wind and waves get going, the spray almost hits the windows.

Six days in Normandy at La Manoir des Impressionistes - a potential itinerary for your next big get together.

Day 1: Arrival, a glass of wine on the terrace and watching the sun set on the Seine.

Day 2: A visit to Honfleur, one of the centres of early impressionism, where Monet learnt from Boudin and presumably walked the streets of the old town, which are beautifully preserved. Home for wine by the pool.

Day 3: Longer day trip to the UNESCO World Heritage site of Mont St Michel, the monastery that seems to hover above the sea. Home for wine in the garden.

Day 4: Slow start to the day, for some reason. Strolls by the water and some time in the sauna and spa. Maybe skipping the wine for one night.⁠

Day 5: Glitz and glamour in Deauville. If the film festival or the polo is on, you can rub shoulders with the rich and famous, but otherwise, enjoy a fabulous lunch and some window shopping in the marina.

Day 6: Walking on the beach under the cliffs of Etretat, also captured by Monet. Dinner in the spectacular dining room where the food will rival anything you've seen or done as a highlight of your trip.
