We want to thank everyone who came to the Globe for the third edition of Greece Panorama. 11,000 visited the fair on Saturday 13th and Sunday, February 14th.

Our exhibitors from Greece and Cyprus greets to see you again next year, dates for 2017 are 11th to 12th February.

2016 With 11,000 visitors in two days, one of the largest and most important exhibition events in Sweden is now well known as, "Greek case" and relates to Greece, tourism, culture and gastronomy of our country! The 3rd edition of , is the only exclusive tourism exhibition including gastronomy and culture in Northern Europe, held on 12-14 February in imposing on Globen Arena, with the support of the Greek Tourism Organization, completed this Sunday with great success and very positive impressions for visitors and exhibitors.

For two days, thousands of visitors of the exhibition had the opportunity to enjoy images, flavors and Greek aromas through dozens of exhibitors, participate in events and activities, many holiday offers, tasting and cooking demonstrations opportunity to buy traditional Greek products. Visitors & Exhibitors have been amazed with "Gamopilafo" (7.000 portions) and 5.000 Greek Coffees that served. Visitors had the chance to to taste citrus and sweets from Platanias, excellent Parga dishes, traditional stone mill transferred specifically for from the Peloponnese and amazed by operation of the visitors were some of the culinary events that stole the impressions in this year , causing crowded the exhibition hall

In Grekland Panorama 2016 this weekend you will taste the Cretan Cuisine! Like Never Before!! This pilaf served during wedding festivities in Crete is famous all over Greece. The rice is cooked in stock made from quality meat and bones. To enhance the taste of the pilaf, fresh butter is also used in generous quantities. However simple this preparation may sound, it requires a skilled person with years of experience in this kind of ceremonial pilaf.

Tillverka din egen olivolja i Globen - 13:e och 14:e februari!

Traditionell olivolja tillverkat på kvarnstenar ger högre kvalitet!
Att tillverka olivolja enligt gamla grekiska traditioner med kvarnsten ger en långsam pressning och ger mildare och skonsammare behandling av oliverna.

Resultatet blir en mjukare och mindre skarp olivolja och mycket lägre nivån av polyfenoler. Tillverkningen av olivolja blir därför både enkel och naturlig. Inga andra tillsatser än oliverna tillsätts, naturen har bidragit med allt som är nödvändigt.

Eftersom oliverna bearbetas samma dag som de skördas har oljan en mycket låg surhet och behåller därför sina hälsofördelar och distinkta smak. Olivolja är helt enkelt en ren fruktjuice som man får genom att pressa oljan från oliverna. Liksom de flesta naturliga fruktjuicer är även oljan extremt hälsosam på grund av dess rika näringsämnen och naturligt nyttiga ingredienser.

Greek Traditional Christmas cookies with crushed walnuts.

These yummy cookies are traditionally served at Christmas in Greek households worldwide.

Ingredients:

1 3/4 cups (400 gr.) Orange juice (fresh or bottled)
2 1/4 cups (530 gr.) sunflower (for a healthier, “Mediterranean” flavor, use olive oil or half sunflower-half olive oil)
5 cups (1.200 gr.) flour
2 tablespoons (30 gr.) powdered sugar
½ teaspoon soda
1 teaspoon cinnamon
1/6 teaspoon clove (no more because it has strong flavor)
3 1/3 tablespoons 50 gr. butter melted
one orange zest
nuts cut into chubby chunks

Syrup:
2 cups (500 gr.) water
3 cups (700 gr.) sugar
1 orange cut in two pieces
2-3 small cinnamon sticks
1/2 cup (100 gr.) honey
Tools: A sieve (like the one for powder)

METHOD
I feel like no matter which recipe’s variation you will choose, the delight is guaranteed. “Mellomakarona” ‘s catch is in their sweetening process. They must be well covered with syrup but crunchy inside. They are considered to be the top Christmas delicacy and no Greek house can do without them. Try them and good luck.

For the syrup:
In a casserole, we boil the water with the sugar, the orange and the cinnamon sticks. We boil them for only 1 minute and we withdraw from fire. We add the honey and let aside to cool down. We can prepare the syrup from the previous day, if we want to.

For the “Mellomakarona”:
In a large, deep bowl we pour all the liquids with the butter. We add the powdered sugar and all the spices. We mix them together with our hands adding the flour. We continue to hand-mix “gently”. At this point we don’t use a mixer so that our pastry won’t thicken.

We give our “mellomakarona” a small oval shape.

Then, we “gently” press them onto the sieve to give them the characteristic shape

(they will look as if they have been squeezed onto a sports-racket).

We place them on a greaseproof cooking paper and we bake in a preheated oven for about 30 minutes at 180C (we must see a dark golden color).

As soon as we take them out of the oven and they are still very hot, we deep them into the cold syrup.

We make sure that they are covered with the syrup on all sides and we let them for 1 minute. We take them out and we let them on the sieve to drain.

Final touch: On a large Christmas (or not) plate we pour some honey and sprinkle a lot of the chubby cut nuts.

We roll over the upper side of the “mellomakarona” so that it is covered completely with the honey and nuts.

We continue this process with all of our “mellomakarona”.

*TIP: Due to the syrup, the “mellomakarona” can stay fresh and juicy only 8 to 10 days. So, if you want to have fresh “mellomakarona” every week, you can do this: After you take them out of the oven, continue with the sweetening process only with half of them. The rest of them, keep them in the refrigerator. When it’s time to serve them too, don’t forget to heat them in the oven before you deep them in the cold syrup. Remember: they must always be hot in order to deep into the cold syrup. Otherwise, the moisture will not let them become crunchy on the inside.
