Anyone else interested in a morning sunrise hike?

Here are a few quick tips if so:
- Check the weather before the night before you go
- Bring a source of light (other than your phone)
- Check what time sunrise is and work back from there as to what time you will have to leave (give yourself and extra 30 mins as the day starts to get brighten up 30 mins before sunrise)
- Bring some form of hydration: water, tea etc.
- Bring a breakfast snack to enjoy as the sin rises!
- Finally, tell someone where you are going and your expected time of return.

Did you know that there is a difference between the what are termed the Nordic countries, and the Scandinavian countries.

Scandinavia is a sub-region in Northern Europe, with strong historical, cultural, and linguistic ties and often refer to Denmark, Norway and Sweden, sometimes more narrowly to the Scandinavian Peninsula.

The broader definition is similar to what are locally called the Nordic countries, which the Scandinavian countries mentioned above and also include Finland, Iceland, the remote Norwegian islands of Svalbard and Jan Mayen, and Greenland (which a constituent country within the Kingdom of Denmark).

I think we have saved the best castle until last and possibly one of the most well-known castles in Germany, Neuschwanstein Castle.

Neuschwanstein Castle is a 19th-century historicist palace on a rugged hill above the village of Hohenschwangau near Füssen in southwest Bavaria, Germany.

The palace was commissioned by King Ludwig II of Bavaria as a retreat and in honour of Richard Wagner. Ludwig chose to pay for the palace out of his personal fortune and by means of extensive borrowing, rather than Bavarian public funds.

The castle was intended as a private residence for the King, until he died in 1886. It was open to the public shortly after his death. Since then more than 61 million people have visited Neuschwanstein Castle. More than 1.3 million people visit annually, with as many as 6,000 per day in the summer.

Drachenburg Castle

Schloss Drachenburg or Drachenburg Castle is a private villa styled as a palace and constructed in the late 19th century. It was completed in only two years (1882–84) on the Drachenfels hill in Königswinter, a German town on the Rhine near the city of Bonn. Baron Stephan von Sarter [de] (1833–1902), a broker and banker, planned to live there, but never did.

The villa is owned by the State Foundation of North Rhine-Westphalia. It is served by an intermediate station on the Drachenfels Railway.

The castle was used in the German TV-series Babylon Berlin as the home of Alfred Nyssen.

Schaumburg Castle

Schaumburg Castle is a castle in Rhineland-Palatinate, Germany, south of Balduinstein near Limburg an der Lahn.

It was owned by the former ruling family of Waldeck and Pyrmont, and it served as the retirement residence of SS General Josias, Hereditary Prince of Waldeck and Pyrmont. It is now owned by a Turkish investment group.

Sigmaringen Castle

Sigmaringen Castle was the princely castle and seat of government for the Princes of Hohenzollern-Sigmaringen. Situated in the Swabian Alb region of Baden-Württemberg, Germany, this castle dominates the skyline of the town of Sigmaringen.

The castle was rebuilt following a fire in 1893, and only the towers of the earlier medieval fortress remain. Schloss Sigmaringen was a family estate of the Swabian Hohenzollern family, a cadet branch of the Hohenzollern family, from which the German Emperors and kings of Prussia came.

During the closing months of World War II, Schloss Sigmaringen was briefly the seat of the Vichy French Government after France was liberated by the Allies.

The castle and museums may be visited throughout the year, but only on guided tours. It is still owned by the Hohenzollern-Sigmaringen family, although they no longer reside there.

Eltz Castle is a medieval castle nestled in the hills above the Moselle between Koblenz and Trier, Germany.

It is still owned by a branch of the same family (the Eltz family) that lived there in the 12th century, 33 generations ago.

Fun fact: Bürresheim Castle, Eltz Castle and Lissingen Castle are the only castles on the left bank of the Rhine in Rhineland-Palatinate which have never been destroyed.

A castle built on the water - Wasserschloss Mitwitz.

The moated Mitwitz Castle was mentioned for the first time in documents in 1266. The basement of the north wing and the northern corner tower already existed at that time. In 1525 the castle was sacked during the German peasants war and partially destroyed. In the following years, the castle was only provisionally repaired. In 1596 it was rebuilt and expanded to its present appearance by Hans Veit I of Würtzburg.

From 1977 to 1989, the lower castle was extensively renovated by the Kronach district. In return, the district was granted a 99-year right to use the castle.

Today the moated castle can be visited. It is also home to a number of attractions and is home to a variety of cultural events and festivals. In addition to White Hall, which offers a wonderful setting for civil weddings, the church's wedding can take place in the castle chapel.

Cochem Castle

Cochem is the seat of and the biggest town in the Cochem-Zell district in Rhineland-Palatinate, Germany.

With just over 5,000 inhabitants, Cochem falls just behind Kusel, in the Kusel district, as Germany's second smallest district seat.

Since 7 June 2009, it has belonged to the Verbandsgemeinde of Cochem.

Hohenzollern Castle, Germany.

Is the ancestral seat of the imperial House of Hohenzollern and is the third of three hilltop castles built on the site.

The first of these castles was constructed in the early 11th century. Over the years the House of Hohenzollern split several times, but the castle remained in the Swabian branch, the dynastic seniors of the Franconian-Brandenburgian cadet branch that later acquired its own imperial throne.
This castle was completely destroyed in 1423 after a ten-month siege by the free imperial cities of Swabia.

The second castle, a larger and sturdier structure, was constructed from 1454 to 1461, which served as a refuge for the Catholic Swabian Hohenzollerns, including during the Thirty Years' War. By the end of the 18th century it was thought to have lost its strategic importance and gradually fell into disrepair, leading to the demolition of several dilapidated buildings.

The third, and current castle which can be seen above was built between 1846 and 1867 as a family memorial by Hohenzollern scion King Frederick William IV of Prussia.
No member of the Hohenzollern family was in permanent or regular residence when it was completed, and none of the three German Emperors of the late 19th and early 20th century German Empire ever occupied the castle; in 1945 it briefly became the home of the former Crown Prince Wilhelm of Germany, son of the last Hohenzollern monarch, Kaiser Wilhelm II.

Did you know that there are more than 20,000 castles in Germany!

And so, we decided to pay a visit to some of the more well-known castles that Germany has to offer.

We begin with Marburger Schloss (Marburg castle), a.k.a. Landgrafenschloss Marburg.

Here we have a castle in Marburg, Hesse, Germany, located on top of Schlossberg (287 m NAP). It was built in the 11th century as a fort, it became the first residence of Landgraviate of Hesse.

Today the building is used as a museum and as an event site.

Finally, our last mouth watering dish involves melting cheese and dipping bread into it!

Fondue is a Swiss melted cheese dish served in a communal pot (caquelon or fondue pot) over a portable stove (réchaud) heated with a candle or spirit lamp, and eaten by dipping bread into the cheese using long-stemmed forks.

It was promoted as a Swiss national dish by the Swiss Cheese Union (Schweizerische Käseunion) in the 1930s, and was popularized in North America in the 1960s.

Since the 1950s, the term "fondue" has been generalized to other dishes in which a food is dipped into a communal pot of liquid kept hot in a fondue pot: chocolate fondue, in which pieces of fruit or pastry are dipped into a melted chocolate mixture, and fondue bourguignonne, in which pieces of meat are cooked in hot oil or broth.

Paella is one of the best-known dishes in Spanish cuisine.

For this reason, many non-Spaniards view it as Spain's national dish, but Spaniards almost unanimously consider it to be a dish from the Valencian region. Valencians, in turn, regard paella as one of their identifying symbols.

Paella takes its name from the wide, shallow traditional pan used to cook the dish on an open fire. Paella means "frying pan" in Valencian, Valencia's regional language.

As a dish, it may have ancient roots, but in its modern form it is traced back to the mid-19th century, in the rural area around the Albufeira lagoon adjacent to the city of Valencia, on the east coast of Spain.

There are many variants to this dish. The one pictured above is known as Paella de Marisco (seafood paella) which replaces meat with seafood and omits beans and green vegetables, while paella mixta (mixed paella) combines meat from livestock, seafood, vegetables, and sometimes beans, with the traditional rice.

Other popular local variations of paella are cooked all through the Mediterranean area, the rest of Spain and internationally.

Greek Gyros!

Similar to a Turkish Kebab, a gyro or gyros is a Greek dish made from meat cooked on a vertical rotisserie. Like shawarma and tacos al pastor, it is derived from the lamb-based doner kebab.

In Greece it is prepared most often with pork or chicken, whilst beef, chicken, and lamb are common in other countries. It is typically served wrapped or stuffed in a pita, along with ingredients such as tomato, onion, and tzatziki sauce.

Quiche is a French tart consisting of pastry crust filled with savoury custard and pieces of cheese, meat, seafood or vegetables.

Although there are many variants of this traditionally french cuisine, the best-known variant as pictured above is quiche Lorraine, which includes lardons or bacon.

Quiche can be served hot or cold and continues to be a popular dish worldwide.

The humble Cornish Pasty!

A pasty is a British baked pastry, a traditional variety of which is particularly associated with Cornwall, United Kingdom. It is made by placing an uncooked filling, typically meat and vegetables, on one half of a flat shortcrust pastry circle, folding the pastry in half to wrap the filling in a semicircle and crimping the curved edge to form a seal before baking.

The traditional Cornish pasty, which since 2011 has Protected Geographical Indication status in Europe, is filled with beef, sliced or diced potato, swede (also known as yellow turnip or rutabaga – referred to in Cornwall as turnip) and onion, seasoned with salt and pepper, and baked.

Today, the pasty is the food most associated with Cornwall. It is regarded as the national dish and accounts for 6% of the Cornish food economy.

Pasties with many different fillings are made and some shops specialize in selling all sorts of pasties.

The origins of the pasty are unclear, though there are many references to them throughout historical documents and fiction. The pasty is now popular worldwide due to the spread of Cornish miners and sailors from across Cornwall, and variations can be found in Australia, Mexico, the United States, Ulster and elsewhere.

One of the most versatile and popular dishes in the world, pizza!

For those living under a rock...pizza is a savory dish of Italian origin consisting of a usually round, flattened base of leavened wheat-based dough topped with tomatoes, cheese, and often various other ingredients (including the very controversial pineapple!), which is then baked at a high temperature, traditionally in a wood-fired oven.

Did you know that a small pizza is sometimes called a pizzetta and a person who makes pizza is known as a pizzaiolo.

Moving away from stews, a dish that ahs always been associated with Germany is Currywurst.

Currywurst is a fast food dish of German origin consisting of steamed, then fried pork sausage typically cut into bite-sized chunks and seasoned with curry ketchup, a sauce based on spiced ketchup or tomato paste topped with curry powder, or a ready-made ketchup seasoned with curry and other spices. As can be seen in this picture by which makes my mouth water, this dish is often served with French fries.

Sticking with the similar theme of soup/stew, if there was any way to make things a little more Irish it is very simple, just add Guinness! This is exactly what the Irish have done to the traditional stew to make it their own!

Traditional Irish Stew would have been made using lamb or mutton along with root vegetables which were available at the time (mainly potato and carrot) but ingredients may vary.

If you have never tried slow cooking a beef stew with Guinness I would highly recommend it.

This week we are taking a trip to the kitchens of Europe to serve some of the more well-known dishes from their respective countries.

I bet you are starting to feel Hungary at the thought of European food so let's head to Eastern Europe for our first dish, Goulash.

Goulash is a soup or stew of meat and vegetables seasoned with paprika and other spices. Originating in Hungary, goulash is a common meal predominantly eaten in Central Europe but also in other parts of Europe. It is one of the national dishes of Hungary and a symbol of the country.

Its origin traces back to the 9th century to stews eaten by Hungarian shepherds. At that time, the cooked and flavored meat was dried with the help of the sun and packed into bags produced from sheep's stomachs, needing only water to make it into a meal.

Pride Festivals are outdoor events celebrating le***an, gay, bisexual, transgender, non-binary and q***r (LGBTQ+) social and self acceptance, achievements, legal rights, and pride. The events also at times serve as demonstrations for legal rights such as same-sex marriage.

Most pride events occur annually, and some take place around June to commemorate the 1969 Stonewall riots in New York City, a pivotal moment in modern LGBTQ social movements. The parades seek to create community and honor the history of the movement.
