Thrilled to meet and film with for her food show in Austria.
Beautiful Sligo town served as the back drop where we shucked and ate our oysters.
I also had the opportunity to introduce my new Oyster pickle product. We have two flavours wild blackberry or watermint & lemonbal. With a 4 month shelf life, they can be stored in your cupboard and eaten on their own, as part of a seafood platter or sharing plate.
Each jar has 6 oysters and are infused with beautiful flavours and have a gorgeous velvet taste.

Sligo Oyster Experience
Aisling spent years studying and working abroad before returning to her roots and settling back in her hometown of Sligo. She now runs a busy café in what used to be the family pub, The Punchbowl. It is located in the heart of Sligo Town and adjacent to the famous W.B. Yeats Statue, from where the café got it’s name. The family lived upstairs for a while when Aisling was younger and she has fond memories of helping out around the pub and the music for which the Punchbowl became well known for. Her parents were well-known business people in Sligo town. Kevin Kelly opened the Punchbowl in 1968 and Pearl ran Kay’s Boutique next to the pub and Downtown Boutique on O’Connell Street. Aisling studied Business and Tourism before travelling to San Francisco to see the sights and build her hospitality skills. Through her travels Aisling gained invaluable experience which ranged from the service industry to organising group travel and educational tours. In 2014, Aisling decided to open a café in the family premises and within a few weeks had renovated and upcycled anything of use, even the old bar counter remains in the coffee house today. On a personal level her fiancee Glenn introduced her to Oysters, their history, harvesting and Sligo Bay. For the last three years Aisling has been strongly involved with the Sligo Food Trail. She has been involved in Foodie Destination bids, attending Meitheal, trade show on their behalf with chairman Anthony Gray. She has recently completed the Acorn Programme, which she found hugely beneficial in planning the expansion of the business. Aisling is also a member of the Sligo BIDS committee.
Bringing all her experience on a professional and personal connections together. After almost 4 years of business, Aisling spotted a niche…and the Sligo Oyster Experience was born.
Sligo Oyster Experience
The Sligo Oyster Experience begins with a short, scenic walk over Hyde Bridge where you can admire the Garavogue River which flows to Sligo Bay and feeds the oyster beds. Your guide, Aisling will direct you to the famous WB Yeats statue where you will hear stories of summers spent by William Butler Yeats here in Sligo. Learn the history of our native oysters which grew in Sligo and Rosses Point. You will then visit WB’s Coffee House where Aisling will guide you through the history of oyster harvesting on the Wild Atlantic Way and how these methods have continued or adapted today. Learn the tricks of the trade with an oyster shucking demonstration and take photos of your experience at the oyster bar. Indulge in Sligo Bay Oysters as a selection of naked or dressed Sligo Bay Oysters are freshly prepared for you. The oysters are served with a glass of crisp white wine, which have been carefully selected to compliment the oysters. Local Sligo Craft Beer also available.
When: The experience is available every Thursday, Friday and Saturday departing Sligo Tourist Office on O’Connell Street at 5 p.m. and proceeding to WB’s Coffee House, 11 Stephen Street, Sligo.
Cost: Adults are €20 each. Children are free of charge.
Bookings: Booking is essential for the guided experience. By completing the contact form below or call us on 071-9141883. For large groups at least 24 hours advance notice is required.
Oyster Menu at WB’s Coffee House (no booking required)
You can also visit WB’s Coffee House between 3-6 p.m. Thursday- Saturday to enjoy our Sligo oyster menu and browse our artisan craft shop. WB’s Coffee House and artisan craft shop is open 8am to 6pm Monday to Friday and 9.30am to 6pm on Saturday.
