That's why this time I got some Hamantashen tips straight from the source - my own mother, Orly ๐Ÿ‘ฉ๐Ÿป

In this case the big secret lies in the ingredients...
These 3 will make your Hamantashen's texture just perfect -

๐Ÿ• Pizza flour
๐Ÿฅš One egg yolk
๐Ÿงˆ Butter

Ready for the recipe?

Ingredients -

๐Ÿฅ„ 2 cups of white pizza flour
๐Ÿฅ„ 1 cup of finely ground almonds
๐Ÿฅ„ 100 grams of sugar powder
๐Ÿฅ„ A pinch of salt
๐Ÿฅ„ One large egg yolk
๐Ÿฅ„ 200 grams of butter
๐Ÿฅ„ 1 spoon of milk (only if the dough is hardened)
๐Ÿฅ„ Lemon zest

I a food processor-
๐Ÿงˆ flour
๐Ÿงˆ Cold butter from the fridge - cut into cubes
Process lightly at medium speed to crumbs.
๐ŸŒŸ tip:
Do not process quickly and for a long time it makes the texture of the cookie hard
Add the finely ground almonds
Egg yolk
Baking powder
Lemon zest
Salt

Process just until formed
You can add a spoonful of milk if the dough is dry.
Remove from the food processor, transfer to plastic wrap - arrange into a round, flat disk, put in the refrigerator for an hour.
After an hour, take out and roll to a thickness of 1/2 centimeter.

Oven 180 degrees for fifteen - up to 20 minutes. The cookie needed to stay white.
