Bali and its world-famous Luwak coffee need no introduction, its the worlds most expensive coffee.
Yes, you heard it right, and an open secret is its made from Poop of a civet, a racoon looking creature.
Yup, Expensive and made of poop who would even try that you might think.
So if you are wondering why they are made of poop?
Civets called as Luwak, feed on ripe coffee cherries and they have a unique ability to select ripe cherries. These cherries are partially digested and fermented as cherries passes through the civet's intestines. What they found is natural enzymes in the civet’s intestines make the beans less acidic and therefore less bitter. Furthermore, the enzymes also remove some caffeine; civet beans are also lower in total protein. This adds to the high aroma, the smooth taste and the low bitterness of kopi luwak coffee
After its defecation, they are collected and separated from the faeces and they go through washing and drying in the sun. Once they are dried and prepared to roast them on a mortar and carefully hand sorted to remove any broken or damaged beans. Once they are sieved and roasted, they are carefully packed for export.
Luwak coffee can be prepared like any other coffee but it is best tasted as it is without any milk or cream to take in its unique taste and flavour.
