Liebe Gäste und Freunde des Ritterhofs,
mit großer Freude möchten wir euch eine persönliche Nachricht mitteilen: Unser Sohn Jacob steht kurz vor dem Abschluss seines Studiums an der renommierten Universität Les Roches Marbella. Im Januar 2025 wird er seinen Bachelor in Business Administration mit den Schwerpunkten Finanzen und Unternehmertum in der Tasche haben. 🎓✨

Für seine Bachelorarbeit widmet er sich einem Thema, das uns in Südtirol sehr am Herzen liegt: „Bewertung der Nachhaltigkeit des alpinen Wintertourismus: Klimaanpassungsstrategien und Stakeholder-Engagement im Gastgewerbe.“ 🌍❄️

Jacob möchte nun die wertvolle Meinung von Einheimischen, Unternehmern und Gästen aus unserer Region einholen, um ein möglichst umfassendes Bild zu zeichnen. Eure Erfahrungen und Ansichten wären für seine Arbeit von unschätzbarem Wert. 🙏

Here is a recipe to delight the eyes and the taste buds of our guests!👇🍎

Ingredients:
For the base:
250 g of flour
120 g of salted butter
1 tablespoon of crème fraîche
80 g of sugar
1 teaspoon of vanilla sugar

For the vanilla cream:
400 ml of milk
4 egg yolks
120 g of sugar
2 tablespoons of vanilla sugar
30 g of cornstarch
100 ml of cream

For the apple filling:
4 South Tyrol apples PGI (Elstar)
80 ml of passion fruit juice
40 g of sugar

Preparation:

1) Prepare the dough by mixing flour, sugar, butter, and crème fraîche in a bowl until well combined. If the mixture is too sticky, add a bit more flour. If too dry, add a bit more crème fraîche. Let it rest in the refrigerator.

2) For the cream, pour milk, sugar, vanilla sugar, egg yolks, and cornstarch into a pot and heat while stirring constantly until the mixture becomes thick. Then incorporate the cream. Cover and refrigerate.

3) Wash the apples, cut them into quarters, and slice them thinly with a peeler. Marinate the apples with sugar and juice, then pour them into a pot and briefly heat them to make them soft and malleable.

4) To create the roses, lay one apple slice next to another, slightly overlapping them and roll them up. The more slices you use, the larger the roses will be. Save the marinade liquid.

5) Place the dough in the mold, stir the vanilla cream to remove any lumps, and pour it over the base. Place the apple rose slices on the cream.

6) Bake the cake at 180°C (356°F) in a convection oven for 30 minutes. Once baked, remove the cake from the oven and brush with the marinade liquid. Let cool and serve the cake cold.
