Dried fruit is also a popular snack during the 𝒑𝒂𝒕𝒓𝒐𝒏 𝒇𝒆𝒔𝒕𝒊𝒗𝒂𝒍𝒔 in various villages across Italy. People stroll through the stands while enjoying almonds, pistachios, and other nuts.

𝐎𝐫𝐞𝐜𝐜𝐡𝐢𝐞𝐭𝐭𝐞 is a type of little ear-shaped pasta that is considered the signature pasta of the 𝑷𝒖𝒈𝒍𝒊𝒂 𝒓𝒆𝒈𝒊𝒐𝒏. In Bari, there is a street where many ladies make this pasta by hand and sell it to tourists.

In the 𝑴𝒚 𝑷𝒖𝒈𝒍𝒊𝒂 𝑫𝒓𝒆𝒂𝒎 7-𝒅𝒂𝒚 𝒕𝒐𝒖𝒓, we will dedicate an entire day to this wonderful tradition by visiting the orecchiette street in the historic city center of Bari and participating in a fresh pasta cooking class.

One of the best ways to enjoy this ear-shaped pasta is by keeping it simple, with tomato sauce, cacioricotta or burrata cheese (like the picture), basil, and a drizzle of Apulian olive oil. Another popular way to enjoy orecchiette is with “cime di rapa” (broccoli rabe) and anchovies.

“The Ciliegino” (cherry tomato) is a typical kind of tomato widely used in Puglia for preparation. They usually grow naturally under the sun of the region and are harvested at the end of the summer, typically in August. Ciliegino is definitely one of the scents of the Puglia region. It is one of the most important ingredients of Focaccia Barese.

𝑶𝒓𝒆𝒄𝒄𝒉𝒊𝒆𝒕𝒕𝒆 is a typical regional fresh pasta that resembles the shape of an ear (orecchio in Italian). This photo was taken on one of the most famous streets in 𝑩𝒂𝒓𝒊 𝑽𝒆𝒄𝒄𝒉𝒊𝒂 (the old town), where the local women make pasta on the street.

In the picture, you can see different versions of orecchiette made from various types of flour. The red orecchiette are colored with 𝒓𝒆𝒅 𝒃𝒆𝒆𝒕, the black ones are made with 𝒃𝒖𝒄𝒌𝒘𝒉𝒆𝒂𝒕 𝒇𝒍𝒐𝒖𝒓 (grano arso), the green ones are colored with 𝒔𝒑𝒊𝒏𝒂𝒄𝒉 𝒇𝒍𝒐𝒖𝒓, the brown ones come from 𝒘𝒉𝒐𝒍𝒆 𝒘𝒉𝒆𝒂𝒕, and the yellow ones are made with regular 𝒔𝒆𝒎𝒐𝒍𝒊𝒏𝒂.

𝑻𝒆𝒏𝒖𝒕𝒆 𝑮𝒊𝒓𝒐𝒍𝒂𝒎𝒐 is nestled in the heart of the 𝒗𝒂𝒍𝒍𝒆 𝒅’𝑰𝒕𝒓𝒊𝒂 countryside, in the 𝑴𝒂𝒓𝒕𝒊𝒏𝒂 𝑭𝒓𝒂𝒏𝒄𝒂 area. This old Italian family has been making wine for decades, with a particular focus on 𝑷𝒓𝒊𝒎𝒊𝒕𝒊𝒗𝒐 and 𝑵𝒆𝒈𝒓𝒂𝒎𝒂𝒓𝒐, the two most famous grape varieties of the region. One of their most renowned blends consists of 50% Primitivo and 50% Negramaro, which is aged in barriques for several months before being exported worldwide.

We will take you on a 𝒕𝒐𝒖𝒓 that showcases the entire winemaking process. You will visit the underground 𝒃𝒂𝒓𝒓𝒊𝒒𝒖𝒆 room, depicted in the picture, which is entirely carved into the limestone. This room maintains the ideal level of natural humidity, creating the perfect conditions for aging the wine. Our tour will conclude with a 𝒕𝒂𝒔𝒕𝒊𝒏𝒈 of the estate's main wines.
