Every Tuscan town pretend to be the "motherland" of Pici. People from , to skip this problem and not to argue, smartly decided to change the name of this particular kind of pasta: where everybody names it pici, in Anghiari are "bringoli".

So simple, so good. One of the best tuscan desserts is with no doubt "Cantucci col Vinsanto", just crunchy biscuits dunked in sweet wine.

Just because making Vinsanto is kinda challenging, let's go with the Cantucci biscuits recipe. ⬇️⬇️⬇️

There are so many versions of it, but we must admit that the one we found on Eataly website is pretty good, and we would like to share it with you

Cantucci Toscani

Yield: about 60 cookies

1¾ cups raw almonds
5 large eggs
1 1/3 cups sugar
8 tablespoons (1 stick) unsalted butter, melted & cooled
4 cups pastry flour
1 teaspoon baking powder

Preheat the oven or a toaster oven to 350°F.

Toast the almonds in the preheated oven until fragrant and lightly golden, 8 to 10 minutes. Set aside to cool.

Beat 4 eggs with the sugar. Pour in the butter, and beat until combined. Add the flour and baking powder. Mix until well combined, then stir in the almonds. Refrigerate the dough until firm, about 1 hour.

When you are ready to bake the cookies, preheat the oven again to 350°F. Line 2 jelly-roll pans or cookie sheets with parchment paper, and set aside.

Transfer the dough to a work surface, and cut it into two equal portions. Shape each portion of dough into a log the length of the prepared pans. Whisk the remaining egg, and brush it lightly onto the tops and sides of the logs, cleaning the brush of excess egg so it doesn’t drop down the sides.

Bake the logs of dough in the oven for 20 minutes. Allow them to cool on the pans, set on racks.

When the logs are cool, use a sharp knife to cut them at an angle into slices about ½-inch thick. Place the cookies on the pans, cut sides down, and bake at 350°F, turning once, until golden, about 25 minutes.

These crunchy cookies will keep for up to one week in a tightly-covered tin.
They are also perfect for dunking in coffee or tea

"Pan di Legna e Vin di Nuvole" in English sounds like "Wooden Bread and Wine from the Clouds". This is the proverb that our used to repeat many years ago when chestnut polenta was the only meal and water was...well, it was water 😉.

Today is an autumn delicacy and the brown flour you mill from it became one of the main ingredients for many delicious salty & sweet meals... yummy

It is , the perfect month for a
Ecco an easy and delicious recipe

2 tablespoons EVO
1 onion, finely chopped
1 leek, white part only, finely sliced
1 garlic clove, crushed
1/2 teaspoon ground black pepper
1/2 teaspoon freshly grated nutmeg
1kg peeled pumpkin, diced
1 large potato, peeled, diced
1L chicken style liquid stock or vegetable liquid stock
1/2 cup (125ml) cream

Heat oil in a large saucepan over low heat, add onion and leek and cook for 2-3 minutes, until softened but not coloured. Add garlic and pepper and cook, stirring, for 30 seconds. Add pumpkin, potato and stock and bring to the boil. Turn heat to low, cover and simmer for 30 minutes. Allow to cool slightly, then blend in batches.
Return soup to pan, stir through cream and reheat gently. Season and add a little more nutmeg, pepper or EVO if desired.

It was no coincidence that the Diary Archive was established in Pieve Santo Stefano. Where the German mines in 1944 wiped out much of the architectural and artistic memory of the town, now there is the place that holds the written memory of a nation. The easy walking in the town provides the possibility of discovering what has been preserved.
For example, there is the Tempietto del Colledestro, which, from ancient Roman times, has celebrated the bond between Pieve and the river Tiber which passes through the old town. This is a place rich in Tuscan art (see: Della Robbia survived work), and the former location of the Florentine magistrates. Our walking tour will end at the Basilica della Madonna dei Lumi, founded in 1590 on the site of an angelic miracle, which has given the town one of the most beautiful festivals in this region of Tuscany. You will walk to the rhythm of stories about Pieve, preserved in Pieve itself, in the Archive.

The Piccolo museo del diario (Small Museum of the Diary) in Pieve Santo Stefano: a tiny museum which holds treasures of history and memories, in a digital and interactive form.

A multimedia experience of storytelling and memory in the Small Museum of the Diary, which was established in 2013. An essential stop in the Memory Route.

The multimedia route was produced by Interaction design Studio in Milan, dotdotdot.it, who were inspired by the book “Il paese dei diari” (The town of the diaries, Terre di Mezzo) written by Mario Perrotta, one of the most important Italian theater artists of the new generation.
