Curiosità culinaria : il “fegato alla veneziana”conoscete l’origine di questa tipica ricetta veneta ? La ricetta del fegato alla veneziana è antica. A dire il vero, l’idea di accoppiare questa frattaglia a qualcosa che ne ammorbidisca il gusto ferroso (e, nel caso del fegato alla veneziana, alle cipolle) non è esclusiva, né originaria del Veneto. Già nell’antica Roma il fegato era servito con i fichi, lo stesso accadeva nella cucina bizantina. Tornando a Venezia, sebbene anche il figà coi fichi trovi spazio tra le numerose ricette regionali, l’autentico figà a la venesiana, come anticipato sopra, è quello con le cipolle, ingrediente più facilmente reperibile nel territorio circostante.
Attenzione, però: nella ricetta del fegato alla veneziana una cipolla non vale l’altra.
La tradizione esige che si usi la cipolla bianca di Chioggia. Questa città ha una lunga storia di pesce e cipolla. Quest’ultima, infatti, soleva essere usata dai pescatori per conservare il pesce quando la pesca era generosa.

It is located in the Dorsoduro district, in the Ca 'Foscari University area. You can admire it on the wall of a house above a canal, very close to Campo Santa Margherita. The usual Artribune suggests taking the Santa Margherita pharmacy as a reference and going up to the bridge that starts from the campiello, from the top of which the work should be seen quite well.
