Brasato al Barolo: much more than a beef stew in red wine! To prepare it, you start the night before by marinating the meat with wine and spices and vegetables. The morning after you slowly stew the meat for several hours, until tender as butter. But it's the day after that the leftovers, if any, are even more delicious!

Do you know the ravioli al plin? Plin means crinkle in Piedmont dialect, and it's perfect for holding a sauce.
These ravioli are filled with meat and green vegetables and have a light sauce of butter and lavender, a modern twist on the traditional butter and sage sauce.
