Cocktail of the Week: Jamaican Breeze

INGREDIENTS:
1.0 slice Fresh ginger
1.5 oz Appleton Estate Reserve Rum
2.0 oz Pineapple juice
0.5 oz Simple syrup
1.0 dash Angostura bitters

METHOD:
1) In a shaker, muddle the ginger.
2) Add the remaining ingredients and fill with ice.
3) Shake, and strain into a rocks glass filled with fresh ice.
4) Garnish with a lime wheel.

1 Lime wheel

Cocktail of the Week: Jamaican Highball

Ingredients:
2.0 oz. Appleton Estate Special Rum
1.0 oz. Triple Sec
0.5 oz. Lime Juice
Dash Angostura Bitters
1.5 oz. Ginger Beer

Directions:
In a mixing tin filled add all ingredients except ginger beer and shake until combined. In a highball glass filled with ice pour in mixture, top with ginger beer and garnish with a lime wedge.

Jamaican Escovitch Fish Recipe:

This is a Jamaican variation on ceviche, a dish popular in the Latin American countries. Here, the recipe has been given a distinct island twist! Red snapper, porgies, mullet, king fish, and other firm-bodied fish can be used successfully in this spicy recipe.

INGREDIENTS: 2 lbs. fish cleaned and gutted (preferably red snapper…can also use porgies or mullets)
3 onions, thinly sliced
2 tbsp. salt
1 cup cooking oil
1/4 lb. Scotch bonnet pepper, sliced (no seeds please very hot!)
1 tbsp. ground black pepper
1 cup. white vinegar
3 carrots (cut into strips)

DIRECTIONS:

1. Wash and dry fish.
2. Cut deep gashes into the sides of each fish.
3. Mix salt and pepper in a small container and use it to Season the inner part of the fish as well as cavities you made,
4. Heat frying pan (preferably a heavy one) then pour oil into pan and heat very well.
5. Place fish in oil when very hot.
6. Turn on the other side is done when first side is done (will be nice, brown, and easy to turn).
7. Place fried fish in flat casserole dish.
8. Add a small amount of water to the oil left from frying the fish.
9. Pour in the onions, carrots and pepper, let it boil for about a minute, then pour in vinegar and continue boiling until the ingredients are nice and sauted (in about a minute or two).
10. Pour this gravy mixture over all fishes and serve either hot or cold.

Talk like a Jamaican...

Using our simple Jamaican Slang glossary, you can talk like a local and not sound like a tourist fresh off the tour bus or cruise ship. Here are 7 Jamaican slang words to use on your visit to Jamaica.

Brawta n. (braw-tah) – A little extra with a purchase; getting something extra for free. After buying a large amount of souvenir items from a vendor ask “Where is my likkle brawta”

Cooyah excl. (koo-yah) – Look at that; you don’t say. An exclamation used for something ludicrous or ridiculous. When you see a taxi driver trying to pass your tour bus on the narrowest road look over to your Jamaican tour guide and say “Cooyah”

Cris n curri excl. (chris an curry) – I’m all good; i’m okay; fabulous. The word “Irie” is worn out and using it is dead giveaway that you are a tourist. Replace it with this expression. When a Jamaican asks if you are okay say “everything cris and curry”

Fass adj. (fah-ass) – Nosy; meddlesome. People can be nosy anywhere you go. Joke around with a smile and ask “How you so fass?”

My yout n. (My youth) – Bro; Friend. You will make good friends in Jamaica quickly. Using this slang moves pass the formal names. “My yout, what is the best Jamaican restaurant near the hotel”

Sistren n. (sis-jrin) – Female friend. You may have heard Rastafarians, including Bob Marley use the word Bredrin which means brethren. It is used to describe male friends. Sistren is the female version of Bredrin. When one of the friendly female market vendors give you a warm smile and hug say “You are my good sistren”

Touch de road excl. (touch the road) – Leave your home; leave your current location. When your tour bus driver is lingering too long at one location ask the driver, “Boss, when we going touch de road”.

Cocktail of the week: Jamaican Sunset.

Ingredients: (makes one)
1 - 1/2 oz vodka
1 - 1/2 oz Jamaican coconut rum
orange juice
1 splash grenadine syrup

Method:
Combine the vodka and the coconut rum. Fill with orange juice and add a splash of grenadine. Shake or stir.

Cocktail of the week: Planter's Punch

Ingredients
•1 1/2 ounces dark rum
•1/4 ounce grenadine - or 1/2 ounce lime juice and 1/4 ounce simple syrup
•2 ounces pineapple, orange, or passion fruit juice (or a mix of fruit juices)
•Club soda
•Seasonal fruit for garnish

Directions:
1. Pour the ingredients into a mixing glass filled with ice cubes.
2. Shake well.
3. Strain into a highball glass filled with ice cubes.
4. Top with club soda.
5. Garnish with seasonal fruits.

Jamaican Recipe of the Week: Curried Chicken

Ingredients:

1 Whole Chicken
4 Tablespoon Curry Powder
2 Tablespoon Meat Seasoning
1 pc (1 inch) fresh ginger
1 Tablespoon Pimento Seeds, grounded (or 1.5 Tsp. Pimento Powder)
2 Teaspoon Salt (or add according to your specific taste)
2 Teaspoon Black Pepper
1 Large Onion
1 Sweet Pepper
1 Scotch Bonnet Pepper
4 Cloves Garlic
2 Stalks Escallion
2 Sprigs fresh Thyme
1 Cup Diced Irish Potatoes (optional)
1 Cup Diced Carrots (optional)
3 Tbsps. Vegetable/Coconut or Olive Oil
3 Cups Water

Directions:

Cut up chicken in small pieces removing the skin as well.
Add vinegar or lemon juice to the water and wash with mixture.
Drain mixture off chicken completely. Rinse again and drain- this time, leave a little of the water on the chicken (about a cup)
Chop onion, escallion, thyme, cloves of garlic as well as green pepper and add to chicken
Add the powdered seasonings, including the pimento, to the chicken
Rub the chopped and powered seasonings into the chicken thoroughly.

Add the oil to a heated saucepan.
Add the curry powder to the hot oil and stir for about a minute on very low flame.
(NOTE: If you prefer however, you may add and rub the curry powder into the chicken along with the other powdered seasonings)

Add the seasoned chicken to the hot seasoned oil and fry until chicken pieces are golden brown.
Add water and cover to cook on a low flame for 35 minutes, turning over periodically, so as to continue coating and ensure even cooking.
Add the Irish potatoes and carrots and cook on a low flame for another 10 minutes.

This will produce a nice saucy curry gravy too.

Serve with Rice and Peas, white rice, roti, dumplings, and any other carbs that you enjoy.

to visit Jamaica: YS Falls

YS Falls is located on the south-end of Jamaica, It’s on a working cattle ranch and thorough-bred horse farm. Like much of Jamaica, the falls are surrounded by lush gardens and beautiful trees. As a result, many people say YS Falls is one of the most beautiful sights they have ever seen.

There are a total of seven waterfalls on the property, most of which cascade into natural pools. A 10-minute tractor ride will take you up to the falls. The scenery on the way up is absolutely beautiful! You will get stunning views of mountains, lush fields with horses, and ride along the beautiful river.

The tractor will drop you off by the gift shop and this is where you decide what you want to do at YS Falls. There is something for everyone here. Guides will walk you around the falls and take as many pictures as you want without getting it wet. There are also opportunities where you can “jump the falls”, “swing the rope” or “do the zip line”. If you however prefer not to climb the falls, don’t worry, there are stairs along the side.

A canopy ride from the top of the falls to the base, and river tubing were recently added as part of the YS Falls attraction.

No attraction is as popular in Jamaica, than the world-famous Dunn’s River Falls, seriously! Just about two (2) miles west of the town of Ocho Rios, the 600-foot Dunn's River falls is in fact so famous that the parking lot is a vast sea of tour buses-any day!

Ascending the falls is usually a group activity: every group gets a guide. The guides tend to encourage their groups to hold hands and up everyone goes linked together. The climb is actually loads of fun. There are plenty of opportunities to take photos during the climb. The guides are extremely welcoming and accommodating in keeping your cameras for you during the climb, so you have plenty of proof that you actually climbed the falls.

Kids are also allowed to climb up the waterfall. Seven is perhaps a good minimum age, depending how sure-footed your child is. It is recommended that you bring your aqua socks/shoes, if you have them; but rentals are available.

Now if you enjoy Mother Nature, you may lose yourself in lush tropical foliage - ferns, bamboos, ginger lilies, crotons, orchids, a variety of palms and breadfruit trees up there. And if you are a souvenir hunter with a genuine love for wood carvings, straw craft and intuitive art, you can browse through the shops in the craft park for unique souvenirs items and gifts.

Most, if not all, hotels in Jamaica arrange trips to Dunns river falls so whether you are in Kingston, Port Antonio, Negril, Montego Bay or the South Coast, don't worry, it is not a problem for you to get there.
