Toddy is a local alcoholic drink made by fermenting the sap of the coconut's flower.

Embark on a journey beyond Colombo, where the age-old tradition of toddy tapping unfolds amidst the towering coconut trees. Witness the skilled toddy tappers, courageously ascending weathered trunks, braving slippery surfaces and the whims of the wind to harvest the elusive coconut flower.

In the early morning light of Sri Lanka's western and south coastal regions like Panadura, Wadduwa, Maggona, Payagala, Beruwala to Bentota, the toddy tapper's acrobatic feats on a high-rope tightrope (athura) between adjacent coconut trees paint a daring spectacle. This perilous task, once a thriving profession, faces decline due to meager earnings, and a diminishing pool of skilled practitioners.

To savor the unique elixir of toddy, the harvested flower undergoes a meticulous process. Beaten for three days, on the fourth day, the flower is cut, unleashing a free flow of sap. Positioned beneath the flower, a container collects the sap overnight, ready for extraction the next morning. Catch a glimpse of this intricate routine by visiting early in the day and seize the opportunity to taste the freshly extracted toddy.

As the collected sap rapidly ferments, aided by atmospheric yeast, it transforms into toddy—a precursor to the potent alcoholic beverage known as Arrack. Beyond its spirited transformation, further fermentation yields Vinegar, a versatile cooking ingredient. Immerse yourself in the rich tapestry of Sri Lankan culture, where each drop of toddy tells a tale of tradition, skill, and the resilience of a vanishing profession.
