AWAITED MANGO SAUCE - NO PRESERVATION


• 4 half ripped mangoes
• 2 tbsp of Sault ( to taste )
• 3 tbsp of vergin coconut oil
• 3 tbsp of roasted curry powder
• Black cardamom ( better grinded )
• 2 cups of Luke warm water
• 1/4 cup good-quality (thick) coconut milk
• 6 tbsp. brown sugar
• 3 cloves garlic, minced
• 1 big inoin (sliced )
• Dry fish ( Maldive dry fish Is better )- slice them – 50 g
• 3 tbsp black pepper
• 2 tbsp of red powder chili (roasted )
• Sliced Green Chili & Sliced curry leaves ( instead you can use Coriander leaves )
1. Peal Mangoes and slice them as you wish , add curry powder , pepper , sault ,red chili powder
Mix well and keep aside until you prepare the fried mixture .

2. Put virgin coconut oil to the pan and once its ready , put sliced curry leaves , chopped garlic , cloves ,back cardomom ,sliced inion , sliced green Chili , sliced dry fish ,fry them all together once it becomes brown colour and with good smell
3. Add mango to the fried mixture now , put 2 cups of water , if you feel water is not enough to boil mangoes, put some more water
4. Once mangoes boiled well add thick coconut milk , cook for 8 minutes
5. Get pan out of your hot plate , let it cool down for 2 hrs , then blend it . sauce it ready to serve

Polos is one of my favorite dishes. But for Sri Lankans living abroad, it is hard to come by. There canned Jack fruit products available in most countries. This recipe is uses these cans.

3 cans of Young Green Jack fruit
1 onion, chopped
1-2 green chillies
2 tsp garlic, chopped
2 tsp ginger, chopped
1 sprig of curry leaves (optional)
1-2 tsp chillie powder
1 tsp turmeric powder
2-3 tsp curry powder
3-4 cardamoms
3-4 cloves
1 inch piece of cinnamo
2-3 pieces of goraka
1 can of coconut milk
salt to taste

Fry the onions, green chillies, ginger, garlic and curry leaves in about 1 tbsp of oil, till golden brown. Next add all the spices, fry for a minute for so till fragrant.
Now add the rest of ingredients, except coconut milk, stir to coat. Add salt.
* Transfer the mixture to a slow cooker, add coconut milk. Stir and cook on low heat for at least 6 hours. The curry would turn a dark brown color when done. (I usually let it cook over night)
Serve hot.
* You can cook this also in a pressure cooker. Cook for about 20-25 minutes at steady pressure (Since cooking times, vary depending on the type of cooker you have, use your judgment here)
** If you want to cook on the stove, cook under low heat in a heavy bottom pan.

Sri Lankan Coconut Sambol - you can add it to your table and taste it with white rice or with bread.

Ingredients (5 persons)

Amount Measure Name
200.00 g Coconut, scraped
15.00 g Chilli powder
10.00 g Chilli, flakes
5.00 g Crushed Pepper, crushed
25.00 g Midlives/Tuna Fish, flakes
50.00 g Onions, chopped
5.00 g Chillies, green, finely chopped
5.00 g Garlic - Finley Chopped
2.5 - 5 ml fresh lime drops
Salt to taste

Method

Step 1

Take a hand grinder and add all ingredients

Step 2

mixed well, lime juice (if have dried fish flakes will be much tastier)

Step 3

add salt and pepper and season it
