Friday Couscous: Morocco’s Most Valued Tradition

As the unofficial symbol of Morocco, couscous is a traditional dish that transcends barriers of class and ethnicity, uniting the country around a mouth-watering pile of grains and vegetables every Friday.

Besides Morocco , Couscous is also a traditional meal in Algeria, Tunisia, Mauritania, and Libya, and North African Jews also brought the dish to Israel. Throughout Europe and North America, instant couscous, which is pre-steamed and dried, has found widespread popularity as a healthier alternative to rice and pasta.

While the origins of the dish are disputed, most sources point to the Imazighen, who are the indigenous people of North Africa. After Islam reached the Maghreb in the 7th century, eating couscous after Friday midday prayers gradually became an authentic Moroccan tradition. Couscous has been a staple in the North African diet for centuries, and remains so today.

The various “couscous wars” over the true genesis of the dish point to the importance of couscous in the national heritage of the Maghreb and beyond. Most notably, Morocco and Algeria tend to quarrel for recognition of ownership over the dish.

Morocco’s in North Africa, and the Sahara Desert dominates the south. This means it has high temperatures all year round. Although there’s different weather around the country, you can count on lots of sun and not much rain in popular holiday spots like Agadir in November.

Climatic regions :

You'll get Mediterranean weather if you're staying on the coast, while places on the North Atlantic coast are a bit cooler because of the Canary Current. There are high temperatures in the south, although when hot desert air and cooler Atlantic air meets there can be fog and mist on the coast. Inland, where Marrakech is, generally has higher temperatures because there’s no sea to cool you down.

Averages:

The average high in popular Agadir’s 25ºC in November, making it perfect for escaping the chilly Europe and America. Although you'll need your swimwear for the days, you should bring some warmer clothes for the evenings as things can get quite cool. The sea temperature’s 20ºC, while humidity’s low. Travelers have access to Moroccan territory, under certain conditions, if they have a vaccination pass or a negative PCR test at least 48 or 72 hours before the date of entry into Morocco. To implement this procedure, a classification of countries into two lists (A and 😎 has been adopted following the recommendations of the Ministry of Health.

What are the steps to follow for travelers from A-list countries?

The classification of countries into two lists was made following studies established by the scientific committee of the Ministry of Health to evaluate the epidemiological situation of each country. The A list includes all countries that can access Morocco and to which it is possible to travel.

Travelers from list A countries present a vaccination pass or certificate of vaccination to enter Morocco. The vaccines authorized in Morocco are : AstraZeneca, Sinopharm, Sputnik, Pfizer/BioNTech, Janssen, Covishield, Moderna, Sinovac. It should also be pointed out that the Moroccan vaccination pass is accepted in the European Union.

For people who could not be vaccinated or fully vaccinated, they must have a negative PCR test on boarding not older than 72 hours. Both types of travelers must complete and sign the health form.

Children under 11 years of age are exempt from PCR screening.

What about maritime borders?

The transit points are the same as last year, namely Genoa in Italy and Sete and Marseille in France. In accordance with the sanitary conditions mentioned above, while specifying that in addition to the PCR test presented at the time of embarkation, the travelers will carry out another test on board and this to ensure the maximum sanitary safety for them and for their relatives.

What are the steps to be taken by travelers from B-list countries?

List B countries are not included in the first list and are not affected by the relief measures available to List A countries. As the gradual opening of the borders is an evolving process, an update of these two lists is planned every two weeks.

Tourists coming from list B countries are classified in two categories. Vaccinated travelers or holders of a certificate attesting that the person is vaccinated with one of the vaccines accepted in Morocco are exempted from quarantine and must present only a negative PCR test dated less than 48 hours and a health form completed and signed before boarding.

Unvaccinated or incompletely vaccinated persons must observe a 10-day controlled quarantine by presenting a negative PCR test less than 48 hours old, a completed and signed health form, a completed and signed declaration of honor for a 10-day confinement and a voucher confirming this confinement in one of the hotels previously designated by the Moroccan authorities. A PCR test is mandatory on the 9th day.

For Moroccan passengers and members of their families and foreigners residents in Morocco who have not been vaccinated or are incompletely vaccinated: self-isolation at home for 5 days is mandatory, with a screening test (rapid antigenic or PCR) on the 5th day. Children under the age of 11 are exempt from PCR testing.

What about people in transit?

A person from country B in transit through a country must complete the 10-day isolation. However, if the person is in transit for more than 10 days in country A, he or she does not need isolation in Morocco.

Learn about the Almohad wall in Rabat
The Almohad wall is one of the most prominent tourist and historical features of Rabat. It is a huge wall of compressed bricks and mud that extends from the south of the city to its west, and its length is about 2265 meters.
The history of the wall dates back to the end of the twelfth century during the reign of the Almohad dynasty, when Sultan Yaqoub Al-Mansour ordered its construction. It was built with designs that combine Andalusian Islamic engineering and architecture with the arts of European castles. Over the ages, it has been subjected to some damage due to earthquakes that struck Morocco, and today it is one It is one of the biggest tourist attractions in Rabat and is visited by millions annually.
The Almohad wall is permeated with 47 towers and 5 huge gates decorated with the most beautiful Islamic inscriptions and decorations and topped with domes of different shapes. Where military columns, and large balconies.

Moroccan Couscous with Seven Vegetables – Couscous Bidaoui:

An authentic recipe for Moroccan Couscous with Seven Vegetables, the ultimate comfort food to enjoy with family and friends. Lamb, beef, or chicken is stewed with assorted veggies, then served atop a mound of light, fluffy steamed couscous. A rich broth seasoned with ginger, pepper and turmeric is poured over all or offered on the side.

Casablanca style Couscous with Seven Vegetables is my favorite variation of Moroccan couscous, especially when topped with a caramelized onion and raisin garnish called tfaya. A much-loved comfort food, many families serve it weekly for Friday lunch, when they’ll gather round a large communal dish like the one shown above.

Couscous with Seven Vegetables is also referred to as Couscous Bidaoui, in reference to the Arabic name for Casablanca, where this
version of the dish originated.

The recipe here is as authentic as it gets. Meat or chicken is stewed with a variety of vegetables in ample broth generously seasoned with ginger, pepper and turmeric. Ideally, the stewing is done in the base of a couscoussierwhile the couscous grains steam above.

In place of fresh meat or poultry, dried meats such as gueddid can be used. This is especially common in the days following Eid Al Adha, or at certain other times of the year, such as the Day of Ashura.
