In Mexico City and many parts of Central Mexico it's chile en nogada season, the dish the hits menus in August as the walnut harvest begins, a key ingredient in the sauce. It's also considered the 'plato patriótico' both because it incorporates the colors of the 🇲🇽 & because it is in season when Independence Day hits on the '16 de septiembre'. ¡Una delicia!
