Nearly all species of sea turtle are now classified as endangered, with three of the seven existing species being critically endangered. WWF is committed to stopping the decline of sea turtles and works for the recovery of the species.

“Sonya was an amazing host! We were a large (12 adults and 9 kids) and she was able to accommodate us and ! She was able to our and change things around for us. So that she was able to avoid the other large tour (she had us start the tour in reverse), took some for us and knew the like the back of her hand. She was so knowledgeable but was able to explain it in such a way that the understood as well. The of our was definitely the Mayan ! The kids were able to make their own ! #10/10 .”

Have you tried “Agua de Chaya” or Eggs with Chaya on our Tours to the Mayan Communities? 😃

La conocemos por su relevancia en la gastronomía Maya, pues forma parte del equilibrio nutricional ya que aporta vitaminas A y B, proteínas, calcio, hierro y fósforo. Sin embargo sus hojas crudas son tóxicas ya que contienen un glucosida que puede liberar cianuro y al momento de la cocción son eliminadas.
Tiene flores masculinas y femeninas y entre sus oolinizadores se encuentran las abejas y las mariposas.
El cultivo de esta planta sigue siendo relevante para el equilibrio de la salud.

Aunque el agua de chaya es lo que más popularmente se conoce hoy sobre esta planta, se encuentra íntimamente ligada a la cultura Maya, en su lengua se le conoce como Chay, y formaba parte de una alimentación cotidiana y muy balanceada. La sustitución de las plantas exóticas por las endémicas ha provocado la disminución de su cultivo, deteriorado los conocimientos ancestrales y las prácticas medicinales, afectando así la identidad de los pueblos originarios.
Este arbusto que crece de manera silvestre puede alcanzar hasta los 6 metros, también se puede cultivar en maceta hasta los metros para su uso cotidiano. En ella, se encuentran propiedades nutricionales más altos que la espinaca y el amaranto. Además de ser muy rica en hierro, contiene vitaminas A y C y antioxidantes.
