Every November 29, the "International Day of the Jaguar" is commemorated 🐆 date where information and dissemination on the conservation of this important species should be provided as well as solutions or alternatives to avoid the threats it presents, such as poaching, fragmentation of its habitat and conflict with humans. 🍃

This beautiful feline is the largest in the American continent and one of the most important in the proper functioning of an ecosystem. 🍃

Here are some facts that you may not have known about the Jaguar:

📌 It differs from other similar felines because the rosettes on its skin have dots on the inside, giving the appearance of eyes.

📌 Jaws of jaguars are so strong that they can break the shell of a large tortoise and have twice the strength of a lion's jaw.

📌 Unlike domestic cats, jaguars love water and are very good swimmers.

📌 The name jaguar comes from the Tupi-Guaraní language and means beast.

📌 Jaguar cubs are born blind and it takes them up to 2 years to become independent from their mothers.

📌 They are carnivores and their diet includes up to 87 animal species, ranging from rodents to sea turtles.

📌 They do not chase their prey. Instead, they stalk stealthily before attacking.

📌 They are solitary, couples only come together to mate and then the mother raises the cubs alone.

A brief history of the Carnitas.

If the mutton barbecue is considered a mestizo dish -fusion of two gastronomies, that of New Spain and that of 16th century Spanish-, pork carnitas are born Creole, since since the pork is introduced in the Viceroyalty, it acquires a menu of naturalization, so much so that today several states of the Republic dispute its gastronomic origin -Michoacán, Querétaro, Jalisco, Hidalgo, Mexico and even the country's capital-; However, it is the Michoacan communities of Quiroga (due to the way they prepare the delicacy) and Santa Clara del Cobre (because the casseroles in which it is fried are made there), which have acquired the greatest national fame.

The final product of the fried pork in its own butter in a copper casserole is called carnitas, a formula that, seasoned with different herbs, water and salt, results in various types of meat: what is known as solid -clean meat without bone, no skin, no viscera- and a combination of parts of the pig: bofe (lung), crop (belly), cheek, heart, criadilla (testicle), cuerito (skin), liver, gut, tongue, lullaby (womb) , nenepil (uterus and belly), ear, kidneys, trunk, virile (p***s), among others.

Thus, although the crossbreeding of an assorted taco -which combines several pork meats- is a dish for educated palates, it is in simplicity -a solid taco with coriander leaves, chopped onion and a few drops of lemon- in which it is find paradise.

The presentation of the delicacy is decorated with deflected onion and half a lemon.
