😋 🌽 Pozole. From the Nahuatl pozolli, from tlapozonalli, which means sparkling, it is a broth made from cacahuazintle corn grains, which is precooked for two hours.

⭐The corn grains lose the fibrous husk that covers them opening like a flower when boiling, which gives them a foamy appearance and a tasty flavor.

🍲We usually accompany pozole with tostadas (fried corn tortillas), radish, lettuce, onion and a delicious agua fresca.

⭐It was declared a Cultural Heritage of Humanity in 2016 and it is a traditional activity still practiced all over the country, especially in the Central region.

🐴🏇There is still a significant difference between men's and women's practices, being the escaramuzas a beautiful coordinated show reserved for women.

👒Trained herders demonstrate their abilities on foot or horseback while dressed in traditional costume that features a wide-brimmed hat for a charro (male herder) and a colorful shawl for a charra (female herder). The outfits, as well as equipment required for the practice, like saddles and spurs, are designed and produced by local artisans, forming additional components of the traditional practice.

👗Women wear a dark loom skirt with discreet details, and hand-woven and machine-embroidered blouses, are covered at the end with a ""moxibal"" on the shoulders that are regularly embroidered with colorful floral shapes.

💜The textile tradition responds to the traditional clothing of its population. The men wear pok'u'ul, a kind of zarape made on a loom, originally white but today it is used in red, blue, green or purple.
