The banana flower is a beautiful thing. It is also totally edible as a salad called a ‘kerabu’. Chopped fine & mixed with other herbs, finely chopped shallots, lots of lime juice it is delicious on its own, or as an accompaniment to a wonderful grain salad or nutty red rice. With a good sambal, it’s a provides a real tingling taste sensation.
Tiny dried shrimp pounded into the spice & herb mix give it another added flavour but if you are vegan, skip them & add extra lemon grass & lime juice.
Banana flower salad is a vehicle for other herbal flavours. It has a lovely texture & a green nutty flavour. A very local humble ingredient, when available, all the various Malaysian kitchens use banana flower & enjoy it in different ways. It’s a brilliant & delicious dish!
