I love seeing the expression on peoples faces when they find a wine that knocks their socks off somewhere they would never expect. We try to go off the beaten track as much as possible and believe that the intimacy and personal touch offered by small boutique wineries is as much a part of the romance of tasting wine as is a good cheese match. We will pick you up from your accommodation and take yo

u around Central Otago in our comfortable air conditioned van. We will wind through gorgeous gorges, over ravenous rivers and under magnificent mountains as we taste some of the most mouthwatering wine and food that the region has to offer.

A behind the scenes look into Methode Traditional production at ...all their bubbly is hand riddled on site.
Riddling, also known as "remuage" is the process of gradually tilting and turning bottles of Champagne to encourage the sediment, which forms during the secondary fermentation, to collect in the neck of the bottle. This sediment is then typically frozen, removed, and the bottle is corked. Riddling helps create the clear and sparkling appearance of Champagne.

The Bannockburn Sluicings were a series of sluicing operations that took place in the Bannockburn during the 19th century.
The sluicings were a method of placer mining, where water was used to wash soil and gravel from a gold-bearing riverbed, allowing the gold to be collected and separated. While extremely costly, oak barrels are vital in the aging and flavouring of wine. The wood of the barrel can add flavour and tannins to the wine. It also helps to oxygenate the wine, which can aid in softening the tannins and overall development.
Additionally, barrels can also help to stabilize the wine and protect it from spoilage.
The specific type of wood used in a barrel (we mostly use French Oak in NZ) as well as the char and toast level of the barrel, can also have a significant impact on the final style of the wine.
