For those that don't know us well, Knifetechnz is a Christchurch based company dealing with a range of knives, equipment, How To filleting videos, DVD and a sharpening service that includes the re-sharpening of commercial processing knives through to the recreational user. Our filleting knives have been designed for comfort, blade length, thickness, sharpness and flexibility for both filleting and

skinning

This benefits our customers from a product range that has already been designed with all the qualities needed for filleting, skinning and boning your catch, provided by an experienced filleter with many years of experience and knowledge. The steel hardness of our blades are soft enough for ease of sharpening but hard enough to maintain a sharp edge and the correct flex of our blades when using. There is a belief that when buying a knife, a flexible blade is best, my personal preference is a little flex, not to much, as the blade needs to be firm enough when putting pressure behind it, and skinning requires the accuracy of a flat surface, any flex in the blade can cause you to cut through or leave excess flesh on the skin and when filleting on the frame, if you can't get your blade to run along the bone smoothly and accurately then this could be your knife has to much flex. Our handle types range from plastic to soft grip with a variety of shapes for personal preference, a plastic grip is a good durable product for all types of cleaning processes and hygiene requirements, while our soft grip and double soft grip handles provide extra comfort and are great in the kitchen. A shorter blade is becoming more popular within the industry for some species which has the benefit of better control from the shorter length, for larger fish like grouper, a 21 cm blade keeps your hand a little bit further away from those large spikes that I’m sure you have met on occasion.
