Basi is a fermented alcohol beverage made from sugarcane extract locally produced throughout Ilocandia. This food processing technique, considered as an intangible cultural heritage of the Ilocanos, used to be widely observed in some parts of Bauang.
The dapilan, a traditional sugarmill aided by a cow or a carabao is used to extract pure binnal (sugarcane juice) from the unas (sugarcane). The juice is boiled in a large cauldron called sinoblan or anawang while filtering the tagapulot (molasses). Lastly, bubod is added to aid in the fermentation of the wine which is stored in burnay jars for at least three months.
Take a look at one of our traditional basi- producers from Upper San Agustin, Bauang, La Union.✨🌿🥂
