At Beit El Karmeh, in the heart of Kufor Aqab’s old town, we dove into the world of tahini. Our workshop began with the art of tahini creation, followed by a hands-on experience where we crafted a three-course Iftar menu, each dish a celebration of tahini’s versatility.🍽️👌🏽

Our appetizer, a hummus trio, was a testament to creativity—a classic recipe, a fresh basil-infused variant, and a striking beetroot edition, all prepared by our wonderful participants.🙌🏽🌈

The main course featured Rummaniyeh, a traditional Palestinian dish from Jaffa named for its key ingredient, pomegranate (‘Rumman’ in Arabic), with tahini as its soul.🍆🧄🌶️🧅🍅

For dessert, Basbousa, a sweet sensation originally from Egypt and beloved in Palestine, was reimagined with a lavish coat of tahini, adding a depth of flavor that transcends the ordinary.🍊

Throughout the workshop, our lovely chef Sawahreh shared not only her recipes but also personal anecdotes and cherished childhood memories, making for a truly memorable experience. The feedback from participants was heartwarming.👩🏽‍🍳👼🏼

Cooking Workshop: The Art of Tahini in Palestinian Cuisine

Join us for a hands-on cooking workshop that delves into the versatile uses of tahini in Palestinian cuisine. Together, we’ll have fun learning how to use tahini in different Palestinian dishes. We’re going to make a delicious three-course meal that celebrates this rich ingredient.

What’s on the Menu?

▪️Tahini Making: We’ll begin by crafting our own tahini from scratch, setting the foundation for our dishes.

▪️Hummus Trio: Learn to whip up your own hummus in three delightful variations: the classic recipe, a fresh twist with basil, and a vibrant beetroot-infused creation.

▪️Main Course - Rummaniyeh: This traditional lentil and eggplant stew, seasoned with tangy pomegranate molasses, will be our main attraction.

▪️Dessert - Basbousa: We’ll end on a sweet note with basbousa, a semolina-based dessert soaked in syrup.

Cultural Insights & Takeaways

As we cook, you’ll uncover the historical significance of each dish and its place in Palestinian culinary traditions. Plus, you’ll receive a complete set of recipes to recreate these flavors in the comfort of your home.

📍Where? Beit Al-Karmeh: a community kitchen located in the old town of Kufor Aqab (very close to TriFitness Gym in Sateh Marhaba).
