The Algarve is a paradise for those who love fish and sea-food. The most important towns in the region for fishing are Olhao, Tavira, Portimao, Quarteira and Vila Real Santo Antonio, where boats arrive loaded with, above all, sardines, tuna, swordfish and cutlefish. This last is the basic ingredient in the famous choquinhos à Algarvia, small fried cutllefish with garlic, aromatised with white wine accompanied with potatoes . Sardines, redmullet, bream and mackerel are usually grilled over hot coals.
More Elaborate dishes include, fish soup, caldeirada de peixe, rice with octupus or fish, arroz de lingueirao razorfish, particulary typical of Faro, stuffed squid and clams made in the cataplana. The Cataplana is a deep pan typical of the Algarve, made from two concave pieces joined by a hinge.
