Butter chicken originated in Delhi, the capital territory of India, sometime during the 1950s. During this time, a man named Kundan Lal Gurjal operated a restaurant in the city, called Moti Mahal. Kundan had settled here and started his business after fleeing from political upheaval in another region of India. Moti Mahal was a success, serving many delightful tandoori dishes (a tandoor is a circular clay oven, and can be found in any Indian restaurant worth its salt).

So the story goes, the cooks of Moti Mahal would mix leftover marinade juices with butter and tomato, and then stew the tandoor-cooked chicken in it. It’s unlikely that they had even the faintest idea of what they had stumbled upon – that is, an internationally-loved delicacy. But it is an irrefutable truth of the world that often the best things in life are discovered quite by accident.

Paneer. It’s a key ingredient in a lot of great Indian dishes but you may not know much about this soft, mild cheese, where it comes from, how it’s made, and other such details.

Paneer cheese is a fresh, creamy, normally unsalted cheese. It’s widely used in north India, and in nearby countries like Afghanistan, Nepal, Bangladesh, and Pakistan. Traditionally, it was made with buffalo milk in these countries.

Today, though, a blend of both buffalo and cow’s milk is widely used by paneer manufacturers. While paneer can also be made wholly from cow’s milk, it will have a slightly different texture and lower fat content.

Unlike most other types of cheese, paneer is made without rennet. This is because rennet is typically sourced from the stomachs of unweaned calves. In parts of the world where Hinduism is the predominant religion, cows are considered sacred – so rennet can’t be used to curdle milk.

Instead of rennet, paneer is made by curdling hot milk using lime/lemon juice, vinegar, yogurt, or citric acid. The result is a soft, fluffy cheese that is firm and can be cut into blocks but doesn’t crumble easily. The texture is usually similar to that of firm tofu, and paneer has the ability to retain its shape for a long time, even when it’s cooked over high heat.

In Poland, they enjoy pocket-like pierogi. Ashkenazi Jewish families make kreplach dumplings. And in America, pasta is prepared and served similarly to the way it is found in Italy– with the exception of all-American spaghetti and meatballs. In fact, when many of us think of pasta we think of Italian food, and most people believe that it originated there. While pasta is traditionally Italian, it actually has a very ancient history that makes it almost impossible to know who came up with the dish first.

Home-grown online grocery marketplace Dei has launched in Singapore.

Standing for ‘Daily Everything’, Dei hosts more than 70 physical Singapore-based Indian retailers, and 18,000 products categorised into canned goods, clothing, locally sourced vegetables, fruit and meat. Dei provides an on-demand consolidated same-day delivery services for products like groceries, hardware, prayer items and home essentials amongst others. Many of these products are sourced directly from India and not available in other shops on the island. Dei helps to bridge the gap between e-commerce and the traditional brick and mortar space, allowing for the consolidation of shipments into one.

Dei was founded to promote digital transformation and introduce new technologies for Little India’s merchant community. With Dei, Little India’s retailers and merchants can enjoy greater access to the greater Singapore community and increase their revenue by up to 30 per cent. Dei hope to collectively on board all business owners and merchants of Little India to ensure that everyone benefits from the nationwide digitalisation push. Furthermore, we are in discussions with representatives from Chinatown and Kampong Glam to expand into their respective precincts, thus providing a truly seamless experience for all Singaporeans.

Our platform is currently raising seed funding for future expansion. It plans to build hyper-local, omnichannel-integrated marketplaces across Southeast Asia. The company is an official agency partner of the Info-Communications Media Development Authority of Singapore (IMDA) and Enterprise Singapore (ESG) under the country’s smart nation initiative. Dei is currently raising seed funding to scale up.
