Slave Tabby Ruins of 1809 Sugar Mill, Sapelo Island, GA.

Note: Tabby is a type of concrete made by burning oyster shells to create lime, then mixing it with water, sand, ash and broken oyster shells. Tabby was used by early Spanish settlers in present-day Florida, then by British colonists primarily in coastal South Carolina and Georgia. It is a man-made analogue of coquina, a naturally-occurring sedimentary rock derived from shells and also used for building.

Hey Ya'll!!! I usually don't give out my reciepes so something must be "fishy" on this Friday night! Try my fish and lemon sauce recipe.

***Fish and Lemon Sauce***
Ingredients:

Fish (about 2 ½ pounds of fresh red fish or something similar)

Sweet Paprika (use Smoked Paprika if you have any)

Cumin Spice

Coriander Spice

A dash or two of Creole Spice (optional, but don’t worry it can be left out)

Dry or fresh parsley (if you get fresh parsley only use flat leaf parsley, not the curly stuff)

Lemon

5 finely minced garlic cloves

Irish Butter (or regular if you cannot find it in the grocery store)

Olive Oil

All-purpose flour

Kosher salt

Fresh gound black pepper
Preheat your oven to about 375 degrees.

Get about 2 ½ pounds of red fish or something similar that is in season and gently rinse it. Lay it on a paper towel and pat off all of the water. Fresh fish is better. Drizzle just a little lemon over it and let the excess liquid drain off

In a shallow bowl make the lemon sauce by mixing about 7 tbsp fresh lemon juice, 7 tbsp extra virgin olive oil, and 4 tbsp melted butter (Irish butter works the best, but use whatever you can find. Most grocery stores carry Irish butter. Add about a teaspoon of dried parsley or fresh flat leaf parsley if you have it. Set the sauce aside.

In another shallow bowl, mix together 1 cup all-purpose flour with 3 tsp ground coriander, two dashes of Creole Spice (optional), 1 tablespoon sweet Spanish paprika, 1 ½ tablespoons of ground cumin, then add, 2 tsp kosher salt to taste and a little fresh ground pepper. Set this mix aside.

Dip the fish in the lemon sauce, then coat it lightly with the flour mixture.

Keep the left-over lemon sauce for later use when baking the fish.

In a pan lightly sear the fish in olive oil to give the fish in some good color, but do not cook it all the way through (about 2 minutes on each side).
Lay the fish in a glass baking dish.

Then, drizzle the lemon sauce over the fish. Then, add 5 finely minced garlic cloves to the baking dish and evenly distribute it around the fish.

Bake in 375 degrees heated oven for about 10 minutes or until the fish is cooked through. The fish is ready when it turns a beautiful white opaque and flakes easily when you take a fork to it. Do not overcook the fish or let the garlic burn. Remember that it has already been cooked and will continue to cook after it comes out of the oven.

Take it out of the oven and let it sit for a moment. Drizzle the sauce from the baking pan on the fish a few times. Garnish with some lemon slices and fresh parsley. Serve with the pan sauce.
