What does bitterness do?
Bitterness in food can be good or bad. On the one hand, there are appealing bitters, such as dark chocolate. Certain vegetables, like eggplant arugula, and radicchio, for example, are full of good bitters, too. On the other hand, bitter can be rather off-putting ~ think of overstewed spinach or burnt asparagus. Bitterness in food amplifies the bitterness in wine. Sauteed bitter greens will make a wine like cabernet sauvignon, which has pronounced tannin (and hence bitterness), taste out of balance. Wine pros generally serve fruity wines with bitter foods so that the impression of bitterness is not overwhelming. Here's a combination that exemplifies this principle: Mediterranean Herb Pasta with Vegetables and Tomatoes (see attached recipe) with Milano Cellars Dolcetto. The fruity flavors of cherries and raspberry will tame the bitterness of the Mediterranean Herb Pasta.

Without stating my position on abortion or inquiring about yours, something doesn't feel right about our state requiring a sonogram when expectant mothers want an abortion given that pro-life mothers are limited on health care coverage of a sonogram...

Seems as though a state fetus sonogram acknowledges unwanted/victimized pregnancies while health care companies place less value on wanted pregnancies.
